Healthy Breakfast Apple Crumble Baby Led Feeding with Oscar.

It dawned on me yesterday while I munched away my apple crumble dessert that this could also serve as a super, healthy and delicious breakfast. So here it is folks – i’m waking you up to apple crumble and nice cream on this rainy Sunday Irish morning. I can think of worse things to be eating right now. I genuinely love this dish and the smells that fill my kitchen just bring me back to my childhood days in my own Mommas kitchen.

It will only take you 15 minutes to prepare and it is so worth every minute. If your little one isn’t quite used to using a spoon yet make the pastry base and use either small pie tins or the mini muffin tin. It makes it much easier for little hands to feed themselves.

Feel free to play around with the recipe. I used coconut oil but you could use butter instead, you can also swap apple for berries or rhubarb which is also really good, although make sure to add a little maple syrup as it can be quite tart. I used a mixture of sweet and cooking apples because we like that sweet/sour taste in our house but you can use just sweet if you prefer.

Ingredients

  

  • 140 g buckwheat flour
  • 80 g Butter
  • 3-4 Tablespoons Water
  • 3 pink lady apples or other sweet apple
  • 2 bramley cooking apple
  • 150 ml water
  • 1 tablespoon vanilla
  • 1 teaspoon allspice or cinnamon
  • 150 g oats
  • 100 g buckwheat flour
  • 80 g melted coconut oil/butter
  • 2 tablespoons maple syrup
  • 2 bananas frozen
  • 3 tablespoons cashew/almond butter

Instructions

 

  • Pre-heat the oven to 180ºC.
  • Traditional Apple Crumble (no pastry)Firstly start by stewing the apple. Peel, core and chop the apples into small bite sized cubes, then add to a saucepan with the water. Bring to the boil, the cover and simmer for 15 minutes until the apple is soft but not totally gone to mush. Add the vanilla and allspice and remove from the heat leaving the lid on while you make the crumble.Pour the oats, flour and melted coconut oil and maple syrup into a bowl and using your fingers mix it so that it resembles bread crumbs.Pour the apple mixture into an oven dish and sprinkle the top with the crumble mixture leaving some spaces for the apple to pop through.Bake at 180ºC for 35 minutes or until golden.
  • Pastry Apple Crumbles for little baby handsIn a bowl sieve your flour, then add the butter and using your fingers rub into the flour until it resembles fine breadcrumbs.Add your water (1 tablespoon at a time) and using your hands mix into the flour and butter until it resembles a dough that sticks together.Roll on a floured surface until thin and then use a small circular cookie cutter to shape out 24 mini circles. Place these into your greased mini muffin baking tin.Spoon a heaped teaspoon of the apple mixture into each one then sprinkle with the crumble mixture. Using your finger push the crumble into the apple slightly so that it won’t fall out when your baby is eating it.Bake at 180ºC for 35 minutes or until golden.
  • Banana Nice CreamAdd all the ingredients to the blender and blend until smooth and creamy. Serve immediately.
