Baby Chicken and Veggie Burgers
When you’re planning a party or BBQ and have babies and toddlers, it’s not always easy to create a menu that pleases everyone. It’s also not practical to make different food for everyone (not to mention time consuming). I like to think about how I can take typical recipe and make them baby friendly. This recipe for example, is basically chicken and veggies packaged into a neat, baby friendly, easy to eat burger that I would also eat!
For successful baby led weaning, the food you give to your little one needs to be solid food which they can feed themselves, with no help from an adult. The food should be soft, manageable pieces which they hold in their hand, rather than being offered on a spoon. Baby-friendly family food recipe are the best thing to serve so that they can try what everyone else is having and it makes life easier for you too so you don’t have to make a load of different meals.
These Baby Chicken and Veggie Burgers are a super easy meal for babies to manage, and they make a great finger food option, ideal for parties. They are essentially chicken burgers containing vegetables and are healthy burgers for kids which tick all the boxes for even the fussiest of little mouths. They combine the texture of chicken combined with soft, flavoursome vegetables that make them that little bit more nutritious, perfect for baby led weaning.
Burgers like this are also freezer friendly and a great option for batch cooking, as you can make them ahead of time and freeze them so that they’re there for a quick and easy healthy meal when you need one. They are a fantastic option when you’re looking for healthy finger food, but they don’t need to be saved for barbecues, they are beautiful for an everyday dinner or if you like to think outside the box, they are an excellent option for a baby led weaning breakfast which will set them up for the day (who said burgers are not for breakfast anyway?)

Baby Chicken and Veggie Burgers

Servings
12 mini burgers (sliders)

Ingredients
Chicken Burgers
2 chicken breasts
4 cloves roasted garlic
1 egg
Juice & Zest of 1 lemon
50g (1 cup) breadcrumbs
1 red bell pepper finely diced
150g frozen peas
Black pepper to season
1 tablespoon Rapeseed oil
To serve
Baby brioche buns
Goat/Cheddar cheese slices
Sliced tomato
Cos lettuce sliced
Method
- Pre-heat oven to 180ºC.
- Add the chicken and garlic to a food processor and process until it turns into a smooth paste.
- Pour in the egg, lemon juice and zest, turn on the food processor again for a moment until they are fully combined, then place the mixture into a bowl.
- Stir in the breadcrumbs, bell pepper, frozen peas, then season with a little pepper and stir well.
- Take a baking tray and line with parchment paper, then drizzle over the rapeseed oil. Use your fingers to spread evenly on the paper.
- Use your hands to form the mixture into baby-sized burgers, then place onto the baking tray.
- Bake for 25 minutes or until the meat is cooked through (this will depend on the size you make them so just check the inside to ensure they are cooked through).
- Serve on a baby brioche bun with a slice of cheese, tomato and lettuce.
