Every teacher i speak with always remembers the homemade Christmas gift. So I like to wrap an individual bar in parchment paper and twine and add a sprig of thyme leaves to give them a festive finish. They can also make a great gift idea if you have a pretty tin and ribbon to put them in. Add an extra personalised touch with a hand-crafted card attached, and these Christmas snacks become the ideal gift for your nursery teachers this festive season.

We have all the ingredients for a healthy Christmas snack
At this festive time of year we have to have cranberries! These little berries have a lot of benefits mainly that they aid digestion and the bioactive within them can also support the immune system, so another reason why they are great for this time of year with all of the coughs and colds about.
Oats: These enhance provide a dose of fibre, vitamins, minerals, and antioxidants, plus they keep belly’s fuller for longer.
Cranberries: These can aid in digestion and gut health, and the bioactive compounds present in cranberry may help reduce the symptoms of cold and flu
Mixed seeds: Like most plant foods, nuts and seeds are a good source of antioxidants and contain a wide variety of vitamins and minerals. They are high in healthy fats, low in unhealthy fats, and are a good source of fibre and protein – all of this means that they help to keep us fuller for longer!
Carrots: Naturally sweet and high in fibre, carrots are a great source of vitamin A and beta-carotene. Vitamin A is vital for vision as it forms part of a protein that absorbs light in the eye. It also supports cell growth and is essential in heart, lung and kidney function.

How to make a healthy Christmas snack
We know there is a lot to think about at Christmas, so we have made sure that these granola bars are super easy to make. Just start with frying the sliced shallots (or onions if you are using them). Next add into the pan the thyme leaves, sage and parsley. Then add to a bowl the chopped cranberries, along with this onion mixture, the mixed seeds, garlic powder, oats, carrot and cheese. Give the mixture a good stir! Then add the whisked eggs and combine them evenly.
Take all of your ingredients and put them into a baking dish lined with parchment paper. These need to bake for about 25 minutes until the top is golden and it is set through. Leave them to cool, then you are ready to slice them into bars.

An extra touch
Why not make an extra amount up to store in a cereal container in the fridge? Use to sprinkle onto soups and salads and even eggs! It adds a lovely crunch to mealtimes!

Baby Led Weaning Savory Granola Bar Recipe

Ingredients
4 tbsp butter
4 shallots (or one medium onion)
4 sprigs fresh thyme leaves
2 sage leaves
Small bunch fresh parsley
1/3 cup (100g) dried cranberries
1/2 cup mixed seeds (crush for babies until 2)
2 tsp garlic powder
2 cups oats
1 medium carrot grated
1 large handful of grated cheese
2 eggs
Method
- Preheat oven to 180ºC/350ºF.
- Finely slice the shallots or onions if using, then melt the butter in a pan and gently fry the onions until soft.
- Add the thyme leaves, finely chop the sage and parsley and add to the pan.
- Chop the cranberries until small, then add to a bowl along with the onion mixture with the mixed seeds, garlic powder, oats, carrot and cheese, then stir.
- Whisk the eggs in a bowl then stir into the oat mixture until it is evenly combined.
- Empty in a baking dish lined with parchment paper, then bake for 25 minutes until the top is golden and set through.
- Leave to cool fully before slicing into bars.
- Store in an airtight container in the fridge.
