Blueberry and Coconut Swirl Mommy & Baby Smoothie

It is blueberry season! Yippee because we love blueberries in our house. Our local fruit and veg store was selling 4 large punnets for €5 this week so I spent €30. Enough blueberries to fill an entire drawer in our freezer. They freeze really well, so this is definitely the time of the year to buy them in bulk. Wash them, portion into freezer bags to use for delicious smoothies and pies over the winter months when blueberries can be a lot more expensive.

They are little heroes of the fruit world as they are so super good for you and your little ones. My mother instilled in us as children to eat our blueberries as they are rich in antioxidants but new research shows that they are also great for improving memory too! Great for the older kiddies now that they are back at school (sigh).

Baby Led Feeding Blueberry and Coconut Swirl Smoothie Berries and Compote

We call this recipe a ‘smoothie swirl’ because it is simply a mix up of 2 smoothies – a vanilla milk and a blueberry, veggie mix smoothie. It looks super impressive I think for something that took less than 10 minutes to prepare and was presented to kids with lots of ‘oooouuu’s’ and ‘ahhhh’s’ and ‘I want to try first’. Not so bad for something that contains kale, beetroot and sweetened only with 1 banana and a few blueberries.

We’ve tried this recipe using a delicious coconut milk and also have tried almond milk but you can switch it up to suit your own tastes. All are seriously yummy!

Ingredients

Vanilla Part
200ml coconut milk
1 teaspoon vanilla extract
1 banana
2 ice cubes

Blueberry Part
160ml blueberry compote (see blueberry compote recipe)
20g kale
160ml coconut milk
1/2 fresh beetroot
2 ice cubes

Method

  1. Start by making the vanilla part. Add all of the ingredients to the blender and blend until smooth and creamy.
  2. Pour into your babies cup and your glass.
  3. Rinse out the blender and make the blueberry part. Add all of the ingredients to the blender and again blend until smooth.
  4. Pour gently into the jar, cup or glass over the back of a dessert spoon so that it doesn’t mix totally with the vanilla mixture, then using a straw swirl it around just a couple of times.
  5. Serve with a little extra blueberry compote on top and sprinkle with a little desiccated coconut.
  6. Enjoy straight away!
