Blueberry Compote
This is a really simple recipe but I wanted to add it in because I will be using it many recipe over the next few months 🙂 Blueberry compote tastes so deliciously sweet and they work spread over oatmeal, yogurt and granola or in a morning smoothie.
Blueberry Compote

Servings
Large Jar

Ingredients
600g blueberries
2 tablespoons water
2 tablespoon chia seeds
Method
- Add blueberries to a pan with water. Bring to the boil then cover with a lid and simmer on a very low heat for 10 minutes.
- Use a potato masher or even a fork to mash them up completely, then add the chia seeds and stir well.
- Pour into a jar to use for muffins, smoothies and lots more recipes to come!
Recipe Notes
If you are not planning on using the compote within a week, pour into an ice cube tray and freeze! Then tip into your breakfast smoothie or defrost for your breakfast morning muffins!
