This is a naturally sweet summer dessert for toddlers and babies is sweetened only with fruit and super delicious! 👶🏻 For smaller babies you can serve just the creamy Greek yoghurt mixture on a preloaded spoon with a few strawberries on the side. You can also grind down the granola mixture and mix it through the yoghurt for a nutrient-packed dessert they will love ❤️

This healthy summer dessert for toddlers and babies is excellent for making ahead and storing. You can double batch the granola and store it in an air-tight jar for easy assembly all summer! You can even use the granola mixture on plain yoghurt or to top smoothie bowls!

Ingredients to make naturally sweetened cheesecake jars:

  • Oats- These are the base of the granola mixture, you can also use gluten-free oats if you choose.
  • Sunflower Seeds- Sunflower seeds add flavour and texture to the granola and are a great source of nutrients like vitamin E and magnese.
  • Desiccated Coconut- Make sure it is desiccated and not shredded when serving to babies.
  • Marscapone or Cream Cheese- These two soft cheeses are interchangeable in this recipe.
  • Plain Greek Yoghurt- A great source of protein!
  • Banana- This is the main sweetening ingredient in this naturally sweetened dessert for toddlers and babies!
  • Diced Strawberries- You can top this treat with diced strawberries or another softer diced fruit like mango, peaches, or raspberries!

How to make strawberry cheesecake jars:

First, you’ll want to make the granola in your oven. This takes about 12-15 minutes and should be cooled completely before adding it to the jar. This step can be made ahead and stored in an airtight container. Second, make the creamy mixture using the banana, mascarpone cheese, and Greek yoghurt. Finally, you will assemble the cheesecake treat by adding the cooled granola to a jar and topping it with the cream mixture and diced strawberries! Serve chilled.

This is a naturally sweet summer dessert for toddlers and babies sweetened only with fruit and super delicious! Make ahead granola for an easy quick snack!

Method

  • Preheat oven to 180ºC.
  • Add all of the granola ingredients to a baking tray and mix well until fully combined. Bake in the oven for 12 minutes until it starts to turn golden, remove and stir, then place back in the oven for a further 12 minutes. Check throughout this time as oven temperatures may vary.
  • Leave to cool fully before adding to a jar for storage.
  • Roll the banana, then open and add to a bowl (this softens it and makes it easy to mash), along with the lemon zest and juice, Mascarpone cheese and yogurt. Stir well until smooth and creamy.
  • To make up the jars — Add 2-3 tablespoons of the granola mixture to the bottom of the jar. For smaller babies use a pestle and mortar and make sure the seeds are ground into a finer powder.
  • Fill the jars 3/4 way up with the cheesecake mixture and finally top with chopped strawberries.
  • Leave to set in the fridge for 2 hours before serving.
