The breakfast drill in a little crazy at times. The two older children rushing around looking for uniforms, making lunches and trying to get a good breakfast into them before they bundle out the door to school. Throw a little baby into the mix and it can sometimes become bedlam. I’ve been trying to get more organised to have breakfast prepared for them a few mornings and so these cookies seemed like the perfect recipe to share. Cookies for breakfast! (my kids think i’ve lost my mind), however, they cookies are only filled with the things they would be eating anyway – Bananas, Oats, Nut Butter and are topped with my delicious chia jam!

12 Cookies
3 Bananas
1/4 Cup Olive Oil
1/2 Cup Cashew Butter (or Peanut Butter)
2 Cups Oats
1 Teaspoon Baking Soda
1 Teaspoon Ground Ginger
1 Teaspoon Ground Cinnamon
1 Teaspoon Sugar Free Vanilla Essence
4 Tablespoons Raspberry Chia Jam
Make these ahead of time so they are on hand for busy mornings.

We love these. Have tried with almond butter too. We substitute the jam for half a raspberry they’re so pretty and inviting!
Can you use anything instead of the nut butter?
If I made a batch of these cookies, how long will they last?
And are they freezer friendly? Could I freeze the “cookie dough” and bake when needed for example?
