Healthy Rainbow Sprinkles - Sugar Free

When I think of sprinkles, I think – Colour! Sugar! and lots of E-Numbers! So, needless to say I never buy them or especially allow my little toddler to have them. They are in fact just empty calories, pure sugar and contain nothing that is considered good for your body. Nobody is going to just eat sprinkles as their main food as they are only intended to be used as a decoration on food, but, what if you could give your children sprinkles that were actually good for them?

I made a curry last week and when I added desiccated coconut, it magically turned yellow! These days my brain works in very strange ways because I instantly thought SPRINKLES! I tried different concoctions of juices, spices and even dried my own spinach leaves (which incidentally takes 5 minutes) but these three are the winners …. so far 🙂

Yellow Turmeric Sprinkles

If you have got turmeric on your clothes you will know how much it stains! It is one of those things that just can’t be removed or at least I have never found a way. Turmeric is one of those amazing spices that has so many uses besides as a spice in curry. In India it is widely used in Ayurvedic medicine for its inflammatory properties and there is also so much interesting research being carried out about turmerics ability to help fight certain diseases. Turmeric is also used as a natural dye for clothes so when you see that beautiful orange/yellow colour on Indian Saris the chances are they were dyed using turmeric. Of course it also adds amazing flavour to your curry and now to sprinkles.

Rest assured though these sprinkles taste yummy and are not spicy! I only used 1/4 of a teaspoon of turmeric as I didn’t want the flavour to be over powering and no one would like spicy sprinkles.

Turmeric is readily available in all supermarkets.

Pink Beetroot Sprinkles

Yes, I am a fan of beetroot and if you have been following Baby Led Feeding you will know that my obsession is real! What’s not to love? Beetroot is exceptionally good for you and is a great source of fibre, manganese and potassium. I’ve been buying those little mini beets in our local supermarket and using them in my veggie smoothie every morning. Just top and tail, wash the skin and in it goes. No peeling, no fussing and it makes me feel good 🙂

I found this beetroot powder in my local health store and it was €3 for a 1kg bag which is great value. If you can’t get beetroot powder though you can use the juice of a beetroot instead of the powder and water. Just juice 1 mini beetroot (2 tablespoons) and pour over the coconut.

Green Spirulina Sprinkles

Spirulina is a freshwater algae that goes naturally in tropical lakes. It does not taste good on its own and the colour is kind of scary looking for those who have never used it before. But, the health benefits are numerous. Spirulina is a rich source of antioxidants, vitamins, selium, zinc and it also is 65-70% complete protein making it the highest of any known food on the planet! I learnt all of this fro the back of the pack in case you were wondering.

Spirulina is strong tasting and it will turn your smoothie into a dark green colour. I only use a teaspoon in smoothies and for these sprinkles only 1/2 a teaspoon. When the sprinkles cook though they only taste like coconut though and not spirulina so added benefits and yumminess = double win!

I promise you this recipe is the quickest you will ever make, and the most satisfying when you see your little toddler eating ice cream covered in goodness …. I’m fast becoming ‘Badass Mom’ (in my own head of course).

Ingredients

Orange Sprinkles

2 tablespoons desiccated coconut
1/4 teaspoon turmeric
2 tablespoons water

Pink Sprinkles

2 tablespoons desiccated coconut
1/2 teaspoon beetroot powder (or juice of 1/2 beetroot)
2 tablespoons water

Green Sprinkles

2 tablespoons desiccated coconut
1/2 teaspoon spirulina
2 tablespoons water

Method

  1. Pre-heat oven to 140ºC
  2. Pick the sprinkles you want to make then mix all the ingredients for that colour together. Stir really well then leave aside for about 15 minutes until the coconut absorbs the liquid.
  3. Empty onto a baking tray and then repeat with the other colours making sure the colours don’t touch (this gives the most vibrant colours).
  4. Bake in the oven for 40 minutes – after 20 minutes give the sprinkles a little toss.
  5. Serve over ice cream, cakes, pies, cream custard, muffins, brownies, fruit, yoghurt, smoothies,……. the world needs more sprinkles 😀

Recipe Notes

Store in a jar with a lid rather than in a plastic bag. This helps keep the sprinkles dry so that they last longer.
