Irish Boxty Potato Pancakes
Irish boxty potato pancakes for babies and toddlers are the perfect St. Patricks Day finger food for baby led weaning! If you LOVE boxty, you have to try this simple potato pancake recipe!

I love the nostalgia that food can bring, and I hope that my kids will feel that way too. Irish boxty is definitely one of those nostalgic foods for me. It’s like Irish comfort food. That is probably why it’s become so popular around the world near St. Patricks Day. So keeping this in mind, I thought it only appropriate to make a mini and baby-friendly version of a traditional Irish boxty potato pancake.

Irish Boxty Potato Pancakes for Babies & Toddlers
All of the ingredients in these simple potato pancakes are easily found at your local grocery store. You may even have them on hand already!
- Potatoes: You will need 3 cooked and mashed and 3 raw and grated for this recipe.
- Spring Onions: Spring onions are really what give these that traditional flavour I was talking about.
- Flour: This binds the pancake together so you’re little one can easily hold the pancakes.
- Milk: Milk adds moisture to the pancake mixture and interacts with the baking powder to help make fluffier potato pancakes.
- Baking Powder: This helps with keeping these potato pancakes from being too dense.
- Oil: For this recipe, I used olive oil. Olive oil is one of the best oils you can you give your baby. It is loaded with monounsaturated fatty acids and is a great source of healthy fats for your baby.
- Sour Cream: One of my favourite ways to serve Irish boxty potato pancakes is with sour cream! You could also use plain non-fat greek yoghurt.

How to make these easy potato pancakes for babies and toddlers
One of the best parts of this potato pancake recipe, it’s a ONE-BOWL recipe! That means all you’ll need to do is add all the recipe ingredients into a large bowl and stir then cook! Boom! Yes, seriously, that’s it.
How to serve these Irish Boxty Potato Pancakes
Serve these delicious little potato pancakes with a side of sour cream or plain Greek yoghurt with a little lemon juice mixed in for dipping.

Ingredients
Boxty Potato Pancakes
3 medium potato mashed
3 medium potatoes raw and grated
1 tsp baking powder
4 spring onions
Black pepper
90g (3/4 cup) flour
250ml (1 cup) milk
Cooking and Serving
Olive oil
Sour cream
Finely sliced red onion (optional)
Lemon wedge
Black pepper
Parsley
Method
Add all of the ingredients for the potato pancakes to a bowl and stir well until fully combined. If the mixture is too dry add a little extra milk.
Heat a light drizzle of olive oil on a frying pan, then divide the mixture into small pancakes. Fry both sides until golden.
Serve with sour cream, sliced red onion (if using), sliced lemon wedges and a little extra pepper, then sprinkle over the finely chopped parsley.
