Kale & Parsley Bruschetta for Toddlers
I’m on an endless search for healthy snacks for toddlers. Sometimes dinner comes after other events like sports for my older children so I need a healthy snack for kids before we go to hold them over until dinner time. Coming up with ideas for snacks for toddlers can become exhausting and that is when we tend to resort to quick packages snacks.
Don’t misunderstand, we eat our fair share of packaged snacks because life gets crazy! I strive to serve my kids as much fresh food as possible. So we always have quick snacks like whole fruit or precut melon or mango. But sometimes a carrot stick is just not as enticing as a package of crackers and that my friends are where this amazing bruschetta for kids comes in!
My Recipe Inspiration Secret
As you may know, if you follow my healthy baby recipe, Dunnes Stores supports my quest for healthier kids. So when they asked me to come up with a yummy savoury healthy snack for toddlers I felt inspired.
I immediately headed to the produce section to see what inspired me. When I shop for a new recipe (if I don’t plan it out ahead of time) I like to only put items that inspire me into the cart. Then I evaluate what I have and sort of developing the recipe right then and there in the middle of Dunnes.
Back to the Recipe!
Now that you know part of my creative secret, let’s talk about the actual bruschetta recipe! Don’t be intimidated when you look at the recipe list. Much of the ingredients are items you often already have like garlic, lemon, and extra virgin olive oil. Ther prep is quite easy too, for the pesto you throw all of the ingredients into a blender or food processor and blend until smooth.
Then you’ll want to chop up the tomatoes into small bits safe for your little one since this a healthy snack for toddlers… but you can have some too. All of the remaining ingredients are stirred into the tomatoes and viola! Just serve the pesto on top of a baguette sliced into soldiers (sticks) for babies and toddlers with a little tomato on top.
You can make this pesto ahead and store it in the refrigerator. Now you have a quick healthy snack for kids ready to go! The tomato mixture actually improves with a little sitting time, so this healthy bruschetta recipe is super for making ahead. I recommend storing for up to 4 days but it never lasts that long at my house.

Kale & Parsley Bruschetta for Toddlers
Prep time
10 minutes
Cook time
5 minutes
Servings
12 mini toasts or 24 baby soldiers

Ingredients
1 baguette (for smaller babies use a regular bread slice)
1 clove garlic
Pesto
185ml (3/4 cup) olive oil
1 teaspoon garlic powder
1/2 cup + 1/4 pumpkin seeds
2 large handfuls kale leaves
2 large handfuls fresh parsley leaves
15 cherry tomatoes
Handful fresh basil leaves finely chopped
1 teaspoon garlic powder
Juice 1/2 lemon
3 tablespoons extra virgin olive oil
Method
- Pre-heat oven to 180ºC.
- Thinly slice the baguette, then place onto a baking tray and toast in the oven for 5 minutes.
- Remove from the oven, then rub each piece with the garlic clove. A very small amount of garlic will be on the toast.
- To make the pesto, add all of the ingredients to a blender and blend until smooth. If it is too thick you can add a little extra olive oil to thin it out.
- Finely chop the tomatoes and add to a bowl along with the remaining ingredients. Stir well.
- To assemble the bruschetta, spoon 1 teaspoon of the pesto onto each bread piece, top with the tomato mixture.
Recipe Notes
For smaller babies – cut a slice of bread into soldiers, lightly toast then serve in the same way.
