You have probably found this recipe after searching for Leftover Turkey Recipes. Voila, here you are and this one is a doozy! These leftover turkey fritters are so delicious and amazing to fill up your freezer with all that turkey goodness. This recipe is also a great snack recipe for Christmas or an addition to your Festive Holiday Meals. This recipe is packed full of veggies too so you’re not wasting any of the freshly prepared vegetables you lovingly made for your Christmas dinner. Why waste delicious food when you can make these fritters, fill up your freezer and feed your baby for months to come.

Recipes for fussy eaters

Replace the veggies with whatever your personal choice is. I think people either love or hate sprouts. My family and I love them but some people prefer to put in courgettes and carrots instead of sprouts and broccoli. Of course, you can be as creative and mix and match. Chive seasoning is complementary with all veggies. 

However, I wouldn’t recommend more than two vegetables or they may begin to fall apart. Children love sweetcorn through them as they add the sweetness they love. If your child is put off by the cranberry and rocket leaves just put the fritter in between a thin based whole wheat burger bun and hey presto, you have a burger. Younger children and weaning babies may enjoy them placed in a halved pepper so it seems like a soft colourful bowl!

Leftover turkey recipes

This recipe is a firm favorite year in, year out and will never get old as it makes use of all of our leftover turkey. But it’s also a great opportunity to start to mix and match with different veggies. So who knows?- It may become a snack you make all year round, not just with your leftover turkey. 

Egg Free Recipes for Kids 

If you are looking for a way to substitute eggs in this recipe, which is a large part of the recipe we recommend a Flaxseed paste. 

To make a flaxseed paste if you prefer not to use eggs. The basic ratio is 1 tablespoon of flaxseed and 3 tablespoons of water to replace one egg. So for this recipe, it’s 3 tablespoons of flaxseed to 9 tablespoons of water

These leftover turkey fritters are delicious and amazing to fill up your freezer. The best baby led weaning finger food and one of my favorite leftover turkey recipes.

Method

  • Finely chop the turkey, Brussels sprouts, broccoli and spring onion until they are really fine then add to a mixing bowl.
  • Add the eggs, mustard, paprika then crush in the garlic and season with a little black pepper. 
  • Finely chop 1/2 of the chives then add to the mixture and stir well until fully combined.
  • Heat about 3-4 tablespoons of rapeseed oil in a non-stick frying pan over a medium head. 
  • Spoon about 2 tablespoons of the mixture onto the pan and use a spoon to pat down and shape into a circular fritter. Repeat fitting 3-4 into the pan then cook both sides until golden brown.
  • To serve, finely chop the remaining chives then sprinkle over, then add a dollop of cranberry sauce and finely chopped rocket leaves
  • Eat when warm.
