Ricotta and Lemon Baby Led Weaning Pancakes

Sometimes I wonder if I will ever run out of new ideas for baby led weaning pancakes. So far, I’m thinking that is impossible. Pancakes are great for baby led weaning because they are extremely versatile. We often think of pancakes as sweet (like these) but they can be savoury too. Not only are the pancake batter ingredients versatile, but the topping options are endless.

Baby Led Weaning Pancake Batter

These lemon and ricotta pancakes are unique because we use a few “non-traditional” ingredients in the batter. I imagine you guessed what they are… ricotta cheese and lemon zest + juice! Adding ricotta cheese to this pancake batter adds additional protein that is important for babies who are weaning. Not only does it add nutrition, but it adds just enough moisture to give the pancake a fluffy but still hearty texture that is easy for babies to chew without teeth. Finally, I say it often but I don’t think I can stress it enough, babies need flavour too! The lemon adds just a hit of tartness to this protein-rich pancake.

Baby Led Weaning Pancake Toppings

If you’ve tried a few of my recipes before, you know I prefer to use natural sugars and less of them when possible. Weaning babies tend to enjoy sweet foods more from birth, like breast milk and formula. So when weaning, we can use that to our advantage to get them to try new foods (like tart lemon and creamy ricotta). We do this by taking naturally sweet fruit like blueberries and turning it into a yummy and healthy topping. For these pancakes, I simply cook the blueberries in a shallow pan with a little water. This will naturally release the sweet fruit juices and make a beautiful baby led weaning pancake topping!

Preventing a Picky Eater

If I am totally honest, having a picky eater was a bit of a nightmare for me. I love food. I love food with flavours like Indian curry and zesty Mexican food. I have always refused to cook a separate meal for my kids because they “don’t like” what is cooked for dinner. Luckily for me, knowing a bit about how to introduce food to babies helped me a lot! So, what’s the tip here? Introduce ALL of the flavours to your baby and toddler early on. Over and over again!

Baby Led Weaning pancakes are among the most versatile recipes when weaning your baby. Introduce new flavours to your baby with these exciting pancakes.

Method

  • Add the buttermilk, ricotta, eggs and lemon zest and juice to a mixing bowl and stir untilsmooth, then add the flour and stir until fully combined.
  • Melt a little butter in a pan, then using an ice cream scoop divide the mixture into minipancakes. Wait until the pancakes start to bubble on the top, then flip over and fry bothsides until golden brown.
  • Meanwhile, add the blueberries to a saucepan along with the water. Bring to a bubble,then reduce the heat to a simmer stirring until the blueberries have softened slightly.
  • Then remove from the heat and leave to cool.
  • Serve the pancakes with an extra sprinkle of lemon zest then top with the blueberriescoulis.
