Mango Lime Spiralized Salad for Fussy Eaters

If you have a fussy eater then you know how difficult it can be to get them to eat veggies of any kind, especially salad! This salad is different! This healthy salad for kids is spiralized so that the rainbow of veggies looks like noodles and noodles are much more fun than vegetables! 😉 Top this colourful salad off with a sweet mango dressing and you have a kid-friendly salad that even your fussy eater will enjoy!

Spiralizing

Spiralizing veggies may look time-consuming, but it’s actually quite easy! There are three main ways to do it:

  1. Spiralizer- This fun little kitchen tool is a must if you have fussy eaters! You place the veggie in the handheld machine and spin a crank or twist the veggie in circles.
  2. Food processor- Most food processors come with a spiralizing grate for the top of the machine. Then, you will need to add the veggie to the Schute and push the on button. This is a great way to make larger portions but requires a little more cleanup.
  3. Veggie peeler- This is how we did it when I was a kid 🙂 Just hold the peeler to the veggie and peel around the veggie in circles.

Key Ingredients for fussy Eaters:

  • Rainbow-coloured veggies like purple beetroot, orange carrot, red cabbage, and green cucumbers!
  • Sweet Mango adds a few spirals to the salad for a pop of flavour and blends into the dressing for a sweet topping and dip.
  • Lime Juice lends just the right amount of tart.

Fresh Mango Salad Dressing

This homemade mango dressing is so simple and you may just become addicted to its sweet yet tangy flavour! All you need to do is add fresh mango, lime juice, apple cider vinegar (with mother for added nutrition), olive oil, fresh ginger, garlic and onion powder to a blender and blend! This fussy eater salad dressing can be stored in the refrigerator for 3-4 days and goes excellent as a dip with whole veggies too!

How to Serve the Fussy Eater Salad

Once you spiralize all the veggies to create fun “noodle” shapes, place all of the colourful veggies into a large bowl. Toss the veggies to mix up the colours. Finally, add the mango pieces and a drizzle of the sweet mango salad dressing. I always like to add a side of dressing to the table so that they can dip their veggie noodles if they choose.

Fussy eaters eat salad too! This fun rainbow colored salad served with sweet mango lime dressing will have even the pickiest of eaters curious about salad.

Method

  • Finely grate the beetroot, carrots and cucumber. You can use a spiraliser, or if you don’t have one, a food processor or even a vegetable peeler. 
  • Finely chop the cabbage and red onion, then add all of the vegetables to a bowl.
  • Peel and chop the mango, then use 1/4 of the flesh and add to the vegetables. 
  • Add the remaining mango to a blender along with the other salad dressing ingredients and blend until smooth and creamy.
  • Drizzle 3-4 tablespoons of the dressing over the salad and gently toss the vegetables until they are covered. 
  • Finely chop the parsley, then sprinkle over along with about 2 teaspoons of sesame seeds and decorate with chopped lime.
  • Serve the salad with the extra dressing and sesame seeds on the table and allow your little ones to add a little bit more if they want.
