It is the most wonderful time of the year! The excitement around our home is electric, especially with a little Oscar who thinks Santa is watching 100% of the time. On his best, best, best behaviour. It is the only time of the year beds are made, toys are picked up with zero fuss! We are also planning parties with our friends and cooking up a storm for the freezer. If you haven’t seen our Turkey Stuffing Muffins which are another perfect baby led weaning finger food, you should definitely check them out too!
Our mission this month was to cook easy food that wouldn’t cost a fortune, could be made ahead of time and would be brilliant for entire family too. There is nothing worse than having to go from store to store to buy ingredients and that is too hard and unobtainable for us busy Mums (and Dads too). All of my ingredients can be found in your local supermarket and nothing crazy going on in there. You can pick your own standard of ingredients that suits your own budget.

Eggs get their rep for boasting dense amounts of complete proteins (all twelve amino acids) in one tiny shell, but they offer a multitude of benefits ranging from heart to brain. These little guys are rich in selenium, potassium, vitamins D, A, E, B12, and B6.
A finger food fact to share with the bigger kids: eggs are each one, giant complete cell. How’s that for a brainy appetizer?
On top of being ultra nutritious (and educational), these mini quiches are tasty! Flakey homemade pastries filled with aromatic basil, cherry tomatoes, and spinach create a beautifully savory treat for your whole family. Ingredients
300g (2 Cups) Plain Flour
120g Butter
3-4 Tablespoons Water
In a bowl sieve your flour, then add the butter and using your fingers rub into the flour until it resembles fine breadcrumbs. Add your water (1 tablespoon at a time) and using your hands mix into the flour and butter until it resembles a dough that sticks together.
Roll on a floured surface until thin and then use a small circular cookie cutter to shape out 24 minicircles, place into a mini muffin tin, then leave in the fridge until you are ready to fill.
Meanwhile, heat the rapeseed oil in a frying pan and gently fry the onions until they are translucent. Add the garlic and spinach and cook for a further 2-3 minutes until the spinach has wilted. Add the chopped up cherry tomatoes and basil leaves and stir well.
Remove the pastry from the fridge then add a heaped teaspoon into each case.
In a separate jug, whisk the eggs until light and fluffy. Fill each little quiche up with the egg, then sprinkle over a little cheddar cheese.
Bake in the oven for 25 minutes until the egg is set.
