Our healthy Christmas muffins combine a great combination of flavours with raspberries and lemon so we are sure they will be a hit! These little mouthfuls of joy are one of our favourite weaning recipes, they are easy to make and our whole family gets to enjoy them. At this time of year they are also a great Christmas recipe for any of your festive parties. If there are any left maybe even Santa might get to enjoy one! 🤶

Christmas muffins are a lovely sweet treat for your babies and the whole family to enjoy. This recipe makes 36 mini muffins, so they are worth the time preparing as they will be a perfect additional for lunchboxes or afternoon treats this Christmas. When thinking about your weaning recipes, mini muffins work really well. The size and the texture are easy for kids to pick up and enjoy themselves. Plus knowing that this is a health muffin too for your little ones, makes its a favourite with a lot of our mums.

Who doesn’t love raspberries?  Not only are they sweet and delicious, these nutritional super-fruits are also full of healthful antioxidants, vitamins, minerals, and fibre. I know with my little one, he didn’t take to them straight away, so featuring them within this Christmas Muffin recipe worked really well as an introduction to the fruit. We now always have raspberries on the shopping list and its a firm favourite in our house.

Weaning when to start

We have a great selection of weaning recipes to help you navigate this time. If I was to share one piece of advice as you start this journey, it would be to choose the right time of day. Your baby wont be in the mood if they are too sleeping, or for that matter if you are tired and don’t have the patience and time to let them explore their food. Choose a time of day when they are awake and alert and not distracted, and make sure you have plenty of time, you don’t want to rush. Its a truly wonderful time as they start to explore new foods so take time to enjoy it.

Muffins for Santa

Who said that Santa just likes mince pies at Christmas? We enjoy baking in our house, so we often use our weaning recipes as a way to get our older children involved in the kitchen. Once you have made the mixture, let them spoon the mixture into the muffin tray and place the raspberries on top. We then leave a few mini muffins out for Santa on Christmas Eve, my favourite!

Ingredients

Makes 36 Mini Muffins

2 cups plain flour

2tsp baking powder

Zest 1 lemon

Juice 1 lemon

250ml (1 cup) milk

2 eggs

125ml olive oil

2 tbsp maple syrup

36 raspberries (one for each mini muffin)

Method

  1. Preheat oven to 180ºC.
  2. Add the flour, baking powder, lemon zest and juice to a bowl and stir.
  3. Pour the milk into a jug, then add the eggs, olive oil and maple syrup. Whisk until it is fully combined and smooth. 
  4. Make a well in the centre of the flour mixture and slowly pour the milk and egg mixture in stirring well as you do. It should be smooth and silky when you are finished. 
  5. Divide the mixture into a lightly oiled mini muffin tin. 
  6. Top each mini muffin with a raspberry, then bake for 20 minutes until the muffins have risen and are fully set. A skewer should come out clean.
  7. Leave on a plate with a cute note for Santa on Christmas Eve 🎅🏻
