Crispy Baked Salmon Nuggets for Baby + Toddlers

These yummy salmon nuggets are super healthy finger food and 100% perfect for baby led weaning. Served with a dollop of yogurt, lime and coriander sauce, you will end up making these nuggets time and time again.

These nuggets are the perfect baby led weaning finger food for babies.

It’s good thing salmon nuggets are freezer friendly because while taking photos I messed up the camera settings and had to make them again. So now I have 6 portions in my freezer. It’s fine though, I’ll just add them to my next few meal plans since I know it’s a recipe my family will love time and again. Just throw the thawed nuggets on a baking sheet and bake until crispy and heated through.

Over the years of talking to so many Mums and Dads, it seems that salmon is a fish that parents really struggle to get their fussy eaters to eat. The challenge was to create a recipe that would not taste super fishy (like traditional salmon fillets) and would also be a kid winner. These salmon nuggets did just that and I have to say I was pleasantly surprised at how much the kids loved them. 

Freezer Friendly

If you are like me and consider yourself a crazy busy parent, then having food in the freezer is an essential part of eating healthily. Make a double batch of these and freeze on a baking sheet right after breading (providing your fish has not already been frozen). When you are ready to use them, just remove them from the freezer, defrost and heat them in the oven as per the instructions below. It really couldn’t be easier!

Eating on a budget

Eating on a budget is a huge part of family life, especially with babies and toddlers. I strive to make friendly recipes that you can feed the entire family. These salmon nuggets are great for babies 6-9 months and 12 months +. So make a double batch, freeze, and serve everyone the same yummy main dish with a few healthy sides like broccoli, sweet potato fries, or a nice colourful salad.

Ingredients

2 salmon darnes
2 tablespoons rapeseed oil
1 medium onion finely diced
2 cloves garlic finely chopped
1 large handful spinach leaves
Small bunch fresh coriander leaves
Juice 1 lime
1 egg beaten
1 cup wholegrain breadcrumbs

Coating
100g plain flour
1 egg
2 cups wholegrain breadcrumbs
125ml natural yogurt
juice 1/2 lime
10 coriander leaves finely chopped

Method

  1. Pre-heat oven to 180ºC.
  2. Place the salmon darnes onto a baking tray lined with parchment paper and bake for 15 minutes until they turn a light pink through.
  3. Meanwhile, heat the rapeseed oil in a frying pan over a medium heat, and gently cook the onion and garlic until they turn translucent.
  4. Finely chop the spinach leaves and coriander, then add to the pan along with the lime juice. Stir for about 15 seconds then remove from the heat and add to a mixing bowl.
  5. Remove the fish from the oven, then using a fork flake to remove from the skin. Check well for bones then add to a bowl along with the egg and breadcrumbs. Use a spoon to mix well until fully combined.
  6. To make the nuggets, form each one, then dip into flour, then egg and finally coat with breadcrumbs. Place the nuggets on a baking tray lined with parchment paper.
  7. Drizzle over a little rapeseed oil then bake for 15 minutes until golden brown.
  8. To make the sauce, add the yogurt, lime juice and chopped coriander to a small bowl and stir well.
  9. Serve the nuggets with a dollop of sauce and a small wedge of lime.
