Strawberry and Cream Cheese Pinwheels Recipe

I’m really excited to share a new recipe for super easy pinwheels for baby led weaning. Pinwheel recipes are probably the most searched recipe when it comes to weaning but, i’ve never quite seen one that looks as pretty as this one. Think of it like a baked cheesecake pinwheel kind of thing, made using lots of delicious strawberries, cream cheese and rolled in an easy shortcrust pasty.

Why do parents love pinwheel recipes for baby led weaning?

Pinwheels make a super finger food for babies. The ideas are endless when it comes to the fillings you can choose. From pesto pinwheels, to pizza pinwheels and everything in-between. This time however, I decided that a dessert pinwheel was going to be my choice and I have been experimenting with a baked cheesecake for quite some time. 

When making these pinwheels, I like to make them roughly the diameter of a regular sized muffin. This ensures they are bite sized for your baby to pick up and put to their mouth all on their own without any frustration.

Can I make Puff Pastry Pinwheels instead of shortcrust pastry?

Yes you absolutely can but honestly, making your own shortcrust pasty is super easy and takes less than 15 minutes. However, if you want to save on time, you can buy a premade shortcrust, or puff pastry roll in your local supermarket and voila you have easy food, quick! 

To make puff pastry pinwheels

  • Make sure your pastry is really cold. If you get delayed while making your pinwheels, just wrap the dough in plastic wrap or alternatively kitchen paper.
  • Roll out the pastry then fill with the cream cheese and strawberry filling.
  • Roll up tightly into a circular rollup.
  • Place into a very cold muffin tin lightly buttered.
  • Bake for 25 minutes without opening the oven door. This will ensure the pastry doesn’t flop!
  • Prep time for this pinwheel recipe is roughly 15 minutes and bake time is 25 minutes. Which leaves a total time at 40 minutes. This includes making my own dough!

Puff pastry pinwheels are great as an after school snack or serve them as a yummy appetizers recipe or even serve as party pinwheels at the next birthday bash.

Can I make pinwheels ahead of time?

Absolutely! I bake them in the oven, then allow to cool fully before freezing. Place a little parchment paper inbetween each one to freeze to prevent sticking. When you are ready to eat, take out of the freezer and add to the oven for 10-12 minutes until warmed the entire way through.

My favorite pinwheels recipe

Cheese pinwheels – I like to use goat cheese with finely chopped basil, sliced roasted red peppers and olives. SO delicious as a party pinwheel recipe but also great for your baby too. Win/Win all round.

Mexican Pinwheels – this is one of my favourite savoury pinwheel recipes ever! Spread over a little Chilli Con Carne (or Non Carne with beans for vegetarian), sprinkle over a little grated cheddar cheese, then roll tightly and bake for 25 minutes until golden. Serve with a dollop of sour cream and guacamole. This is one of my favourite comfort food recipes in the world! And a total hit with the the kids.

Italian Pinwheels – Mix unsalted tomato puree with a little garlic powder. Add water until it forms into a smooth sauce, then spread over the pastry. Add freshly chopped tomatoes, basil leaves and finally sprinkle over mozzarella. Think of this as the best party food recipe EVER!

This Strawberry and Cream Cheese pinwheels recipe is absolutely delicious and so good you will end up eating your babies food! No lie!

Method

  • Pre-heat oven to 200ºC.
  • Add flour and butter to a mixing bowl then rub together until the flour resembles fine breadcrumbs. Add water one tablespoon at a time until it comes together into a dough.
  • Empty onto a floured work surface and knead gently, then roll until thin. Wrap pastry in parchment paper then refrigerate until ready to use.
  • Meanwhile, add marscapone, yogurt, maple syrup, lemon zest and half of the strawberries to a mixing bowl. Mush the strawberries to break them apart, then using an electric whisk, beat until the cheese mixture it is a lovely pink smooth colour.
  • Chop the remaining strawberries, then fold into the mixture along with the icing sugar. Leave in the fridge for 15 minutes before using. 
  • Remove pastry and filling from the fridge, then spread the filling over the pastry and roll up into a log shape. Cut the pastry into slices then place each slice into a lightly buttered muffin tin. Brush with a little egg wash to help it to brown.
  • Bake for 20-25 minutes until golden. Leave to cool fully before removing from the tin.
  • Serve cool with extra strawberries, mint leaves and a teeny sprinkle of icing sugar (optional).

These tasted really good, but I couldn’t get the pastry in the middle to cook! Any tips?
I think maybe trying puff pastry and cooking on a sheet rather than in cupcake tins might work better.
