Healthy Brown Bread Strawberry Ice Cream Sandwich
It is so warm here in Ireland and it can be a real struggle to keep the little ones cool. The heat means they are eating a little less so I am trying to give them a healthy finger foods that will not only cool them down but will also provide a bit of energy and goodness too.
Mommas, get your blender out, start freezing your bananas and fruit because these ice cream sambos are one of the best things you will make this year. Honestly and your little ones will squeal with delight when they see these coming.
This is kind of like nice cream, except a whole lot nicer. I used greek yogurt (find it beside the yogurts) and it is just so deliciously creamy. It has become the only yogurt we ever buy because it is so nice and it has the benefit of being high in protein too! So especially for our house where we have a few vegetarians it is a great way of getting some extra goodness into them.
For this recipe I used Irish Strawberries which are current in abundance and because they are in season they are really inexpensive too. This is the time to stock up and if you have a large freezer buy loads! They are brilliant for smoothies, chia puddings but most especially for ice cream!
Ice cream wafers are normally sugar laden and loaded with sweeteners so the challenge is taken to create something new! Voila, brown bread wafers made simply using healthy sliced brown bread which I found in the bakery of my local store. Super easy, super quick and honestly delicious.

While this recipe only takes 5 minutes to make you do need to have a little patience, and if you don’t, you can always serve the ice cream straight from the blender as soft serve. However, if you wait, just a short while, it goes just hard enough to slice, and then you have the most delicious ice cream sandwiches ever!
When you think about it, this healthy finger food recipe is just banana and toast, just done in a really different but much more delicious way.

Healthy Brown Bread Strawberry Ice Cream Sandwich

8 Sandwiches

Ingredients
8 Slices Wholemeal Bread
2 teaspoons rapeseed oil
8 Strawberries Frozen
4 Bananas Sliced and Frozen
4 tbsp Greek Yogurt
1 teaspoon vanilla extract (optional)
8 Strawberries sliced (not frozen)
Method
- Pre-heat oven to 180ºC.
- Cut crusts from bread, then cut each slice in half. Roll with a rolling pin until flat, then brush over a little rapeseed oil each side. Bake for 10 minutes until crispy, then cool fully.
- Meanwhile, add the frozen strawberries and banana along with the Greek Yogurt and vanilla to a blender and blend until smooth and creamy.
- Pour into a loaf tin lined with cling film then stir in the fresh sliced strawberries.
- Smooth the mixture out then freeze for 2 hours until it is solid.
- Turn the tin upside down and slice into portions. Place the bread wafers each side and enjoy!
