These Super Easy Irish Soda Bread Muffins are super easy to make and one of the most traditional Irish recipes for St.Patricks Day. We grew up on homemade bread recipes and my Mum would never even dream about buying a sliced pan from the shops, especially when a slice of yummy soda bread could be whipped up in less than 5 minutes. Soda Bread recipes should be simple, easy and they never require yeast, so zero waiting around for bread to prove. So, if you are searching for the Best Irish Soda bread recipe then look no further! Ok, so I may be a little biased about this recipe but to be fair I have been making Irish soda bread for 40 years. I was born in Ireland in a place called Multyfarnham (pronounced; multi-farn-ham). Sheep, cows, chickens and more green fields than you can shake a stick at. My Mum loved to bake and as kids, she would have us all standing on chairs learning about rising dough, why we shouldn’t open an oven on half-cooked bread and how we should grow up being able to bake for our families. She might have said ‘men’ at the time, but that’s all changed 🙂

Occasionally, I buy fresh bread in the bakers when I am super lazy or just crazy busy with life, but more and more I am seeing the benefits of making it fresh at home myself. Homemade bread is so cheap to make and there is great satisfaction in being able to eat your efforts!

No Yeast Bread Recipe

If you have already scrolled down to the ingredients list, you will see that it contains no yeast. So how does a yeast-free bread rise and be super fluffy when baked? This is down to the reaction of the buttermilk and bicarbonate of soda and regular milk just won’t do the same thing. Buttermilk is high in acid which reacts with the alkaline bread soda causing bread to rise.

Traditionally, soda bread used up slightly soured milk (slightly, not totally soured) which has the same effect as buttermilk, as the milk soured the acid increased. Soda bread was made to use up all ingredients which is just so amazing as there was little or no waste, ever! I need to be more like that in life!

How to make Irish Soda Bread in 4 Steps

This bread recipe takes less than 10 minutes to make! Seriously, you will never want to buy a loaf of soda again when you see how simple it is. The bread can be left as a whole loaf, however, I cut mine into 16 parts, rolled it into balls then baked it in a lightly floured muffin tin. Great for the freezer afterwards and the best school lunch EVER!

  1. Mix the dry ingredients together – if you are adding extras so it here; (cheese and onion, frozen berries, fresh berries) or just leave as plain.
  2. Stir in buttermilk until dough comes together.
  3. Cut dough into 16 parts then gently roll each one into a ball.
  4. Add to a muffin tin and bake for 25 minutes.

How to make the PERFECT Irish Soda Bread

  1. Don’t over-knead the dough. This is the most important thing when it comes to making soda bread. Your bread should be light and fluffy inside with a crunchy crust.
  2. Whether you are making one giant loaf or mini Irish Soda Breads, score an X on the top of each one. This helps them cook perfectly!
  3. To prevent the crust from going too hard, cook until the crust is a light brown, this makes them perfect for toddlers and babies with teeth!

What age can my baby have this recipe?

Because I am making these for kids, I baked the mini breads for 25 minutes so they were slightly golden on top rather than the traditional dark brown, crust which is too hard for little teeth. This is a traditional Irish Soda Bread recipe made into muffins and even better, it is done 4 different ways. A taste of Ireland in every single bite.

Ingredients


Method

  • Pre-heat oven to 180ºC.
  • In a large mixing bowl mix together flour, baking soda and caraway seeds. Stir in the buttermilk until the dough comes together, then empty onto a lightly floured work surface. 
  • Gently knead very, very slightly (over kneaded bread is tough!), then cut into 16 parts. 
  • Roll each part into a ball then press down slightly and place into a floured muffin tin.
  • Leave as plain soda bread or add cheese and chive, frozen berries or fresh berries.
  • Bake for 25-30 minutes until golden.
  • Serve with butter and jam, cream cheese or your favourite topping.
