We don’t hear too much about the importance of lunch, there’s a lot of focus on a healthy breakfast and of course dinner, but lunch even for adults is often a β€˜grab a sandwich’ situation which isn’t healthy for anyone to do every day. More consideration should be given to what you eat for lunch and what your child eats too.

First of all, it’s important to teach your child early on that having a healthy lunch like these veggie loaded french toast skewers with fruit, is important as it’s a good habit to get into for later on in life.

Thirdly, developing healthy food habits as early as possible is vital for good health in later life, for knowing the importance of a healthy lunch, (even if it does include hidden veggies for now as opposed to kids knowing about it, as by the time they do your kids will be big veggie fans anyway) and helping to combat the childhood obesity which is a major issue.

As parents, you already have a lot on your plate (no pun intended), so thinking about healthy lunches to give your children can easily slip to the bottom of the list and with picky eaters to think about it can be hard to get it right. However, with some easy healthy lunchbox suggestions, you don’t have to worry, and you can make the whole process of going back to school much easier and lunchtimes more exciting. They are all geared towards healthy lunchboxes and making life easy for parents.

This recipe for veggie-loaded french toast skewers with fruit makes eight skewers and includes milk, spinach, red pepper and some gorgeous fruit making it a delicious lunch for anyone and a real treat for going back to school. As well as this, it’s easy to make, and will only take a few minutes.

Fun school lunch idea for picky eaters. finger food and food on a stick are always a hit with kids. This healthy lunch is great for picky eaters!

Method

  • Add the milk and vegetables to a blender and blend until completely smooth.
  • Beat the eggs in a large bowl, then pour in the vegetable mixture, sprinkle in a little black pepper and mix well.
  • Drizzle a little rapeseed oil into a pan over medium heat, then place the bread squares into the egg and vegetable mixture. Add to the pan when it is completely soaked through. (You might need to take it out of the bowl with a spatula to prevent the bread breaking apart.)
  • Fry until golden brown, about 2 minutes per side.
  • To serve, load skewers with a mix of mango, French toast and strawberry.
  • Sprinkle over a little lemon zest and serve.
