Veggie Loaded Irish Stew
There is something really yummy about stew especially when it has a twist of Irish’ness about it. Stew is also a brilliant dish for baby led weaning because all of the ingredients are so super soft when cooked especially the meat. Irish Stew is a really traditional Irish dish, it’s not called Irish Stew for nothing and this one I have used as many Irish grown ingredients as possible.
As a child my Mum cooked it every single week probably because it is a one pot wonder sort of dish that you really don’t have to worry too much about. Super easy especially when you have a house full of children and life is busy. Everything gets thrown in together and all of those flavours mish-mash together until you have this glorious, flavoursome dish that the entire family will love.
A recipe for really Fussy Eaters
It’s so secret that I am a veggie pusher (that is what my daughter called me!) but, to be honest that is something I am super proud of. Getting children eating their veggies can be a huge struggle for parents and so I want to help make life easy! This recipe is a great way to pack in the veggies, from peppers to carrots and kale, it not only is full of goodness but is also really tasty too. When you serve this to your little ones make it fun! Tell them it is loaded with veggies and ask them to imagine how strong they are going to be after they eat it. Every spoonful comment how much stronger they already look! This totally worked for Oscar. We felt his muscles in his arms which he calls ‘his rocks’. The conversation goes like this:
Me: Let me feel your rocks Oscar. Ouuu they feel a little soft. Take one spoonful and let’s check them again.
Oscar: Ok one spoonful gone!
Me: They are starting to feel a little harder….lets see what happens when you take another one
(repeat until the dinner is almost gone)
Oscar: NOW feel my rocks
Me: AHHHHH MY HEAD IS BEING SQUASHED!!!! Your rocks are CRAZY hard Oscar!!!!!! AHHHHH!!!!!!
He just wants to please us and anytime he is being fussy this always, always works.
It is also just as easy to make a double stew and freeze as it is to make one stew! What better way than to come home knowing you have a dinner already made, defrosted and ready to heat up. Especially when the weather is cold and you want something warm and nutritious.

Veggie Loaded Irish Stew

Ingredients
- Rapeseed oil
- 325 g beef strips
- 1 onion
- 2 carrots
- 1 tsp cumin seeds
- 2 cloves garlic
- Thumbsize ginger
- 1 tbsp flour of your choice
- 2 tbsp tomato puree
- 1 litre water
- 1 tin chopped tomatoes
- 2 red peppers
- 1 kg baby potatoes
- Large handful kale
- Sprig rosemary
Method
- Heat rapeseed oil in a large pan over a medium heat.
- Add the beef and brown for about 2-3 minutes, then leave aside in a bowl.
- Using the same pot, gently fry the onions and carrots until the onions turn translucent in colour then add the cumin seeds, garlic and ginger and cook for a further minute until the garlic is cooked.
- Stir in the flour, then the tomato puree and slowly add the water stirring continuously until it is fully combined along with the tin of chopped tomatoes
- Roughly chop the peppers, baby potatoes and kale then add to the pot along with a sprig of rosemary finely chopped.
- Add the meat back into the pot then leave to simmer over a low heat for at least 1 hour. I leave mine cooking on a super low heat for around 3 hours.
- Serve warm
