Baby led weaning Egg Free Pancakes with Pineapple Coulis

One of my absolute favourite recipes for baby led weaning breakfast is pancakes! They are one of the best finger foods for babies and toddlers and are also great cold in lunchboxes as well.

This baby pancake recipe is egg-free and I also used a plant based milk too so they are perfect for little ones with allergies. They don’t need any sweetener with the pineapple as it is already super sweet enough.

Egg-Free Pancakes

So your baby can’t eat egg, which i’m sure has you up the walls wondering what you can replace it with. For this recipe I used the ground flaxseed from the Dunnes Stores WholeFoods range. The bag cost €1 and it is such a super replacement for egg. You could also use chia seed too but my preference is flax because I love the flavour.

3 ingredient Pineapple & Turmeric Coulis 

The sauce is so simple and uses only 3 simple ingredients – Pineapple, Lemon and Turmeric. I promise you will make this every single week! I used turmeric initially to make the sauce more yellow but the addition to the sauce is unreal! It not only enhances the colour but adds so much goodness too. Turmeric has some incredible anti-inflammation properties and I have read some incredible posts over the past while. If I was to recommend just one recipe for you to make that will completely knock your socks off it would be these egg-free baby pancakes. They are super filling for toddlers and babies and my own kids demolished them as an after school snack, right after I took these photos.

You have a good mix of gluten free pancakes here and also egg free pancakes too. All totally safe for those little hands and perfect for the freezer too. Just put a little parchment paper in-between each one, then freeze. You can simply defrost in a toaster for a super quick toddler snack – because we all know toddlers will not wait for food. EVER!

What goes in...

  • 1 cup plain white flour (or buckwheat flour for gluten free)
  • 2 teaspoons baking powder
  • 1/4 cup whole flaxseeds
  • 250ml (1 cup) milk of your choice
  • Rapeseed oil for frying
  • Coulis
  • 1 pineapple
  • 2 teaspoons turmeric
  • Juice 1 lemon
  • To serve
  • Yogurt of your choice
  • 10 mint leaves finely chopped
  • Pomegranate seeds

How to make it...

  1. Add the flour, baking powder and flaxseed to a bowl and stir well.
  2. Make a well in the centre and slowly start whisking in the milk until it turns into a smooth batter.
  3. Drizzle a little rapeseed oil onto a pan over a medium heat, then divide the mixture into small hand sized pancakes.
  4. Once the pancake starts to bubble flip over and cook both sides until golden.
  5. Meanwhile, to make the pineapple coulis, add all the coulis ingredients to a blender and blend until smooth and silky.
  6. To serve, add a dollop of yogurt and a drizzle over the pineapple coulis, then sprinkle over the mint leaves and pomegranate seeds.
