One of my absolute favourite recipes for baby led weaning breakfast is pancakes! They are one of the best finger foods for babies and toddlers and are also great cold in lunchboxes as well.

This baby pancake recipe is egg-free and I also used a plant-based milk too so they are perfect for little ones with allergies. They don’t need any sweetener with the pineapple as it is already super sweet enough.

Egg-Free Pancakes

Flaxseed’s health benefits come from the fact that it’s high in fiber and omega-3 fatty acids, as well as phytochemicals called lignans.

So your baby can’t eat egg, which I’m sure has you up the walls wondering what you can replace it with. For this recipe, I used the ground flaxseed you could also use chia seed too but my preference is flax because I love the flavour.

“Flaxseed’s health benefits come from the fact that it’s high in fiber and omega-3 fatty acids, as well as phytochemicals called lignans. One tablespoon (7 grams) of ground flaxseed contains 2 grams of polyunsaturated fatty acids (includes the omega 3s), 2 grams of dietary fiber and 37 calories.

Flaxseed is commonly used to improve digestive health or relieve constipation. Flaxseed may also help lower total blood cholesterol and low-density lipoprotein (LDL, or “bad”) cholesterol levels, which may help reduce the risk of heart disease.” -Mayo Clinic

3 ingredient Pineapple & Turmeric Coulis 

The sauce is so simple and uses only 3 simple ingredients – Pineapple, Lemon and Turmeric. I promise you will make this every single week! I used turmeric initially to make the sauce more yellow but the addition to the sauce is unreal! It not only enhances the colour but adds so much goodness too. Turmeric has some incredible anti-inflammation properties and I have read some incredible posts over the past while. Baby-led weaning pancakes and toddler snack ideas 

One of the biggest requests on my social media is from parents looking for snack ideas for baby-led weaning or toddler snack ideas. My biggest recommendation for first finger foods for babies would 100% be pancakes! They are so amazing and are literally packed full of goodness. You have a good mix of gluten-free pancakes here and also egg-free pancakes too. All totally safe for those little hands and perfect for the freezer too. Just put a little parchment paper in-between each one, then freeze. You can simply defrost in a toaster for a super quick toddler snack – because we all know toddlers will not wait for food. EVER!

Healthy baby-led weaning breakfast idea. Freezer friendly pancakes & 3 ingredient pineapple & turmeric coulis. Egg Free, Dairy Free, & Vegan!

Method

  • Add the flour, baking powder and flaxseed to a bowl and stir well.Make a well in the centre and slowly start whisking in the milk until it turns into a smooth batter.
  • Drizzle a little rapeseed oil onto a pan over medium heat, then divide the mixture into small hand-sized pancakes.
  • Once the pancake starts to bubble flip over and cook both sides until golden.
  • Meanwhile, to make the pineapple coulis, add all the coulis ingredients to a blender and blend until smooth and silky.
  • To serve, add a dollop of yogurt and a drizzle over the pineapple coulis, then sprinkle over the mint leaves and pomegranate seeds.
