Luckily, I found a fantastic 3-for-2 deal on Dunnes Stores Seafood Mix and frozen veggies and created this delicious, easy family dinner idea that is a deal baby led weaning meal. I’ve been so excited to share this one! It’s inexpensive, loaded with vegetables and Omega 3s, and it’s freezer friendly. A complete, easy family recipe that everyone in the house adores makes for a very happy chef!

This pasta recipe is one of my go-tos for my newly weaning babies. It’s packed with yummy, vitamin C, A, and K rich broccoli and kale, and the spaghetti is so much fun for food play. These veggies are nice and tender, so no need for teeth, but you can always cut it into smaller pieces if you’re concerned. Either way, I definitely recommend keeping a few wipes close by — creamy goodness can be a little messy sometimes!

As a freezer friendly pasta recipe, doubling up for quick school lunches and fast, nutritious dinners on busy nights is super simple. Just store your extras in serving-sized plastic baggies, wrapped well, then add a little milk to thin out the frozen sauce as you reheat in a skillet, and viola! Beats a TV dinner any night, and it takes less time than grilled cheese.

I also love this meal as a quickie for when the kids are away. My husband and I are both pasta and seafood fans. This beauty tastes like a recipe straight out of a cafe, so it’s a perfect in-house date night — in our pjs, on the sofa, chocolate on stand-by, of course.

Seriously, this is our family’s favorite “fancy” pasta recipe. It’s great for any occasion, and packed to the brim with essential Omega 3s and beautiful veggies that can easily be frozen for later. As a busy momma with a passion for delicious food (that’s also convenient), this one’s definitely a winner!

What goes in...

  • 250g Dunnes Stores Premium Spaghetti
  • 3 tablespoons olive oil
  • 2 cloves garlic crushed
  • 2 tablespoons plain flour
  • 375ml milk
  • 125ml (1/2 cup) Dunnes Stores Fresh Irish Cream
  • 130g Dunnes Stores tenderstem Broccoli
  • 180g Dunnes Stores Seafood Mix
  • 50g Dunnes Stores Cavalo Nero Kale
  • Parsley to serve

How to make it...

  1. Bring a large pot of water to the boil, then add the spaghetti. Reduce the heat to a simmer for 12 minutes stirring occasionally. Drain and leave aside until ready to use.
  2. Meanwhile, heat the oil in a pan then gently fry the garlic for about a minute.
  3. Add the flour into the pan and stir well. Keep stirring for about 30 seconds then slowly whisk in the milk until the sauce is lovely and thick, then add the cream and stir well.
  4. Slice the broccoli stems and add to the pan, stir well and cook until they start to turn tender.
  5. Add the seafood mix and cook for about 8-10 minutes.
  6. Finely chop the kale and stir into the sauce. Cook for a minute then remove from the heat.
  7. Mix the spaghetti into the sauce, stir well, then sprinkle over a little parsley and serve
