These healthy baby breakfast cookie’s seemed like the perfect recipe to share. Cookies for breakfast! (my kids think I’ve lost my mind), however, these cookies are only filled with the things they would be eating anyway – Bananas, Oats, and Nut Butter. They are also are topped with my delicious chia jam!

The perfect hectic morning breakfast

The breakfast drill is a little crazy at times. The two older children rushing around looking for uniforms, making lunches and trying to get a good breakfast into them before they bundle out the door to school is a hard thing! Throw a little baby into the mix and it can sometimes become bedlam! I’ve been trying to get more organized to have breakfast prepared early, but it takes some extra effort. Having a quick and easy meal on hand ready to go can seem like a Godsend on mornings like the above mentioned. That’s why these baby led weaning friendly breakfast cookies are your new best friend! Not only will your baby love their gooey sweet goodness, but your older children will be scrambling to take an extra one on the bus or in the car as well!

These healthy cookies also are a great freezer friendly breakfast too! Make a double batch of the cookies and save half of them in the freezer for future breakfasts

How to prepare the breakfast cookies

These cookies on take about 25 minutes to make in total. That’s including prep time and everything! I am guessing that you have almost all the ingredients you will need to make these cookies on hand in your pantry too!  The main staples of this recipe are bananas, oats, and a nut butter. The other ingredients such as olive oil (substitute for coconut oil too), baking soda, and additional spices are common kitchen finds as well. These are the perfect healthy breakfast when you are running low on groceries in the house. Which lets face it, that’s a total struggle at the end of the week. 

Prepare the cookies with the help of your toddler by adding the bananas, oil and nut butter to your blender and blend until it becomes smooth and gooey. Place all of the remaining ingredients (except for the chia jam) into a bowl and then pour the banana mixture in. Let your toddler help by giving it a good stir and making sure all of the oats and banana mixture is completely combined. Spoon a heaping tablespoon of the mixture onto a lightly oiled baking tray or baking sheets with parchment paper. Leave a little space between each one. Using the back of the spoon press the centre down on each of cookies to make a little well, then spoon about a teaspoon of raspberry chia jam into each one.

Finally, bake in the oven for 12-15 minutes. Keep an eye on them from 12 minutes on as you don’t want them to get too hard for little mouths.

  • Spoon a heaped tablespoon of the mixture onto a lightly oiled baking tray or non stick mat. Leave a little space between each one. I got 12 cookies from my mix but you can make them smaller or larger depending on how old your baby is.
  • Using the back of the spoon press the centre down on each of cookies to make a little well, then spoon about a teaspoon of raspberry chia jam into each one.
  • Bake in the oven for 12-15 minutes. Keep an eye on them from 12 minutes on as you don’t want them to get too hard for little mouths.
  • Remove from the oven and leave to cool and set before giving them to your baby
