This recipe serves four children and includes exciting flavours such as paprika and ground coriander, which will undoubtedly tickle your kids taste buds. It also provides your kids with plenty of protein with chicken breasts, eggs and goats cheese as well as healthy fat from avocados and plenty of veg. They don’t take long to make either, just the time it takes to cook the chicken and then a little bit of chopping and putting everything on the stick.

What goes in...

  • 2 chicken breasts roasted
  • 2 teaspoons paprika
  • 1/2 teaspoon ground coriander
  • Black pepper
  • Drizzle rapeseed oil
  • 2 hardboiled eggs quartered
  • 1 small head cos lettuce
  • 4 cherry tomatoes halved
  • 2 baby avocados (or 1 regular sized)
  • Sauce
  • 200ml natural yogurt
  • 60g soft goat cheese

How to make it...

  1. Cut the chicken breasts roughly into chunks, then place onto a pan along with the spices, pepper and rapeseed oil.
  2. Turn the heat on and stir well until the chicken is fully coated and crispy on the outside, remove from the heat and allow to cool.
  3. Make the skewers by adding a piece of chicken, a leave of lettuce, half a cherry tomato, a piece of avocado and egg, then repeat.
  4. Repeat until the ingredients have all been used.
  5. To make the sauce, pour the yogurt in a bowl, mash the soft goat cheese and stir well until it is smooth and creamy.
  6. Drizzle over the sauce to serve.
