Mini Baby-Friendly Quiches – Baby Led Weaning Finger Food

It is the most wonderful time of the year! The excitement around our home is electric, especially with a little Oscar who thinks Santa is watching 100% of the time. On his best, best, best behaviour. It is the only time of the year beds are made, toys are picked up with zero fuss! We are also planning parties with our friends and cooking up a storm for Dunnes Stores. If you haven’t seen our Turkey Stuffing Muffins which are another perfect baby led weaning finger food, you should definitely check them out too!

Our mission this month was to cook easy food that wouldn’t cost a fortune, could be made ahead of time and would be brilliant for entire family too. There is nothing worse than having to go from store to store to buy ingredients and that is too hard and unobtainable for us busy Mums (and Dads too). All of my ingredients can be found in your local Dunnes Stores and they are all reasonably priced! You can pick your own standard of ingredients that suits your own budget. I use organic eggs, but you can use the EveryDay Savers and save money. Christmas is CRAZY expensive so you want to reduce cost and not add to it.

Mini quiches are a wonderful baby led weaning finger food.  For one, they’re simply adorable — the cutest little appetizer for family parties!  Most importantly, they give you the opportunity to create a balanced meal for baby in one bite!  This recipe is packed full of healthy protein and exploding with veggies, scoring a 10+ on the yummy scale.  Triple win, Mamas! This is a Christmas party food for kids you will end up making the entire year round.

Eggs get their rep for boasting dense amounts of complete proteins (all twelve amino acids) in one tiny shell, but they offer a multitude of benefits ranging from heart to brain. These little guys are rich in selenium, potassium, vitamins D, A, E, B12, and B6.

A finger food fact to share with the bigger kids: eggs are each one, giant complete cell.  How’s that for a brainy appetizer?

What goes in...

  • 300g (2 Cups) Plain Flour
  • 120g Butter
  • 3-4 Tablespoons Water
  •  
  • Drizzle rapeseed oil
  • 1 medium onion finely diced
  • 3 cloves garlic crushed
  • 1 large handful spinach leaves finely chopped
  • 24 cherry tomatoes quartered
  • Handful fresh basil leaves freshly chopped
  • 4 free-range Eggs
  • 100g grated cheddar cheese

How to make it...

  1. Preheat oven to 180ºC
  2. In a bowl sieve your flour, then add the butter and using your fingers rub into the flour until it resembles fine breadcrumbs. Add your water (1 tablespoon at a time) and using your hands mix into the flour and butter until it resembles a dough that sticks together.
  3. Roll on a floured surface until thin and then use a small circular cookie cutter to shape out 24 mini circles, then leave in the fridge until you are ready to fill.
  4. Meanwhile, heat the rapeseed oil in a frying pan and gently fry the onions until they are translucent. Add the garlic and spinach and cook for a further 2-3 minutes until the spinach has wilted. Add the chopped up cherry tomatoes and basil leaves and stir well.
  5. Remove the pastry from the fridge then add a heaped teaspoon into each case.
  6. In a separate jug, whisk the eggs until light and fluffy. Fill each little quiche up with the egg, then sprinkle over a little cheddar cheese.
  7. Bake in the oven for 25 minutes until the egg is set.
  8. Cool fully before serving.
  • HELPFUL TIP - Make ahead and FREEZE!

    I am a BIG fan of cooking food ahead of time and freezing. These yummy quiches are amazing for the freezer and they defrost super quick too in an oven (at 180ºC) or in a microwave at a defrost setting. Mine only takes 4 minutes. Then warm through before serving.
