Overnight Blueberry French Toast Bake – Yummy Baby Led Weaning Breakfast!
This Sunday is Mothers Day in Ireland and the UK (I don’t know why the US is different). It is a day where we celebrate Mums every where. More than likely your little ones will want to do something special for you on Mothers Day – it’s only natural seeing as you are a pretty fabulous Momma 🙂
I wanted to create a recipe that would not only make life super easy, but could be prepared the night before. This way Daddy can reheat it in the oven and Mammy gets a delicious breakfast in bed. Your little ones can even help to prepare it so they feel super involved too.
A one pan baby led weaning friendly breakfast
Making everything in one tray really appeals so much to me. Not only does it help with cleaning up afterwards but it is a lovely way to cook. Plonk everything in, cover in the sauce, scatter over the berries and that is really it.
It also saves tonnes of time especially if you are looking for a good baby led weaning breakfast. Time is always so precious when it comes to mealtimes and cooking for a family.
French Toast in an oven
This recipe has a bread pudding sort of taste to it rather than French toast, however all of the components of a French Toast recipe are here. French toast was the very first recipe I ever made all by myself. I remember being around 12 and making it for my Mum for Mothers Day – under the watchful eyes of my Dad of course. It really is such an easy dish to make and one I think kids should learn to make. Even if it just means they can bring you brekkie in bed 🙂
If you have a small baby and want to make this a brilliant baby led weaning breakfast, you can take off any of the crispy parts and just serve the soft bread and berries. Voila totally baby safe and super tasty too.
Feeding a Family on a Budget
I totally get how expensive it is to feed a family especially if you have a large family. I have 3 children and 2 of them are already eating adult sized portions! It costs a lot to feed them but obviously that is a necessity.
Over the past few year I have been working with Dunnes Stores and most especially their products in the Everyday Savers range. Firstly the quality of the produce is amazing. The very best of Irish veggies, fruits and meats and so many of them are only 1 euro too. It just makes it easier to eat really good and super healthy food on a budget. I find I am now spending way less and getting way more bang for my buck (I really love that saying).
Dunnes Stores have also just brought some amazing new products to market under their own label. Like maple syrup for example, it is still 100% Canadian maple syrup but half the price of their competitors and it tastes just as good.
This particular recipe cost less than €10 and fed all five of us! (this took into consideration that I only used a little maple syrup and 1/2 a tub of blueberries).
