  • 1 Clove Garlic<\/li>
  • 1 Cup Packed with Baby Leaf Spinach Chopped Finely<\/li>
  • 1 Cup Plain Flour<\/li>
  • 1 Teaspoon Baking Powder<\/li>
  • 1 Egg<\/li>
  • 1\/2 Cup Milk<\/li>
  • 1\/4 Cup Rapeseed Oil<\/li>
  • 100 g Goat Cheese<\/li>
  • 4 Sprigs Thyme<\/li><\/ul>\t<\/div>\n\t

    1. Preheat oven to 190\u00b0C<\/li>
    2. Heat a tablespoon of oil and gently fry the garlic for about 5 minutes until soft but not brown.<\/li>
    3. Add the finely chopped baby leaf spinach to the pan and cook until slightly wilted. This will only take about 2-3 minutes and will keep all the flavour and nutrients in the leaves. Set aside to cool.<\/li>
    4. Sieve the flour and baking powder into a bowl.<\/li>
    5. In a separate jug add the egg, milk and rapseseed\/olive oil and whisk to fully combine.<\/li>
    6. Slowly pour this wet mixture into your flour and baking powder whisking until fully combined. Take your time to avoid the mixture forming lumps.<\/li>
    7. Flake in the goat cheese and thyme and then add the spinach and garlic folding gently into your batter.<\/li>
    8. Pour into a greased mini muffin tin and bake for 25mins or until golden brown. Cool on a baking tray before serving.<\/li><\/ol>\t<\/div>\n\t

      When I was a little kid one of my favourite things was arriving at my Granny’s house and being served homemade Irish brown bread with rhubarb jam. Still to this day, it brings me back to my Granddad and I eyeing up the last slice and his wink of knowing he was giving it to me \ud83d\ude42<\/p>\n

      Bread has always been my weakness in life and I’ve been really lucky to have always been surrounded by people who loved to make it. My Mam – a.k.a the ‘Granny’ in ‘Grannys 10 Minute Brown Bread’ recently gave me her own recipe and told me to tweak it to suit Oscar. She said, “he can’t get enough of it in my house so you’re going to have to make it for him”. It seems like my little man is taking after his own mother.<\/p>\n

      This recipe is the quickest brown bread you’ll ever make, and the most delicious. I have made it using both wheat flour and buckwheat and both are good. It is full of seeds that pack a punch and make this an insanely healthy bread. For smaller babies, I cut the crust off and give them the super soft inside. It works brilliant for soup, dipping, with chia seed jam or with some nut butter spread on it.<\/p>\n

She could keep us entertained for rainy days on end with art projects, sewing, and baking pies. In the evenings after our baths she would twirl us around the sitting room and would always patiently watch our childhood sitting room performances. As a child though I didn’t see the things that made her so amazing. She was just my Mammy and that’s what Mammies did.<\/p>\n

      Granny\u2019s 10 Minute Brown Bread<\/h2>\n\t\t

      \n\t\tA super quick brown bread recipe that kids love! This no yeast bread is packed full of goodness from seeds to oats and is delicious as a healthy snack for kids.\t<\/p>\n\t

      \n\t\t\t<\/div>\n\t
      \n\t\t
      • 1 Cup Course Wheat Flour (or buckwheat flour for gluten free)<\/li>
      • 1 + 1\/2 Cups Oats<\/li>
      • 1\/4 Cup Sunflower Seeds<\/li>
      • 1\/4 Cup Pumpkin Seeds<\/li>
      • 1\/4 Cup Chia Seeds<\/li>
      • 1 Teaspoon Bicarbonate of Soda<\/li>
      • 400 ml Buttermilk<\/li><\/ul>\t<\/div>\n\t
        \n\t\t
        1. Pre-heat oven to 200\u00baC.<\/li>
        2. Add the sunflower and pumpkin seeds to a pestle and mortar and grind down slightly so that they are still rough but not whole. It makes it easier for little mouths to eat.<\/li>
        3. Add all the dry ingredients into a large mixing bowl and stir to combine.<\/li>
        4. Make a well in the middle and pour in the buttermilk.<\/li>
        5. Stir until the entire mixture is covered in the liquid.<\/li>
        6. Line a loaf tin with parchment paper and then pour your mixture in and spread evenly all around. I tap the bottom of the tin a few times on the counter to release any air bubbles.<\/li>
        7. Bake in the oven for 50mins. If you stick a skewer into the centre it should come out clean.<\/li>
        8. When you take the bread out of the oven wrap in a clean tea-towel until the bread is cooled. This is important for little ones<\/strong> as it prevents the crust from going too hard.<\/li><\/ol>\t<\/div>\n\t
          \n\t\t

          This freezes really well. I usually make 4 loafs at the same time. So hand to keep in the freezer.<\/p>\n\t<\/div>\n\t

          • 8 Pitted Medjool Dates<\/li>
          • 1 400 ml Tin Full Fat Coconut Milk<\/li>

            1. Add all of your ingredients to a blender. Turn to a high speed until the mixture becomes a smooth silky chocolately sauce.<\/li>
            2. Pour into ramekin dishes and leave to set in the fridge overnight – it magically turns into a delicious chocolate\u00a0mousse!<\/li><\/ol>\t<\/div>\n\t

              Store in closed jars for approx 1 week in your fridge or place into moulds and freeze.               Baked Beans are one of those dishes that the majority of kids just love and are a staple convenience food in both Ireland and the UK. There is so much sugar and salt in the store bought cans that I no longer include them in my weekly shop (much to my kids dismay). I decided to use butterbeans for this recipe because they are much easier for little ones to pick up as opposed to the haricot kind.<\/p>\n

              I started with a good tomato base sauce, then slowly added spices, a little apple cider vinegar and finally added my beloved medjool dates one at a time until the sweetness was just right. The preparation takes only 15 minutes and I normally make a few batches so that they are always in the freezer ready to go. When they are baked in the oven for a few hours the taste changes again into a rich delicious concoction of yumminess. My three kids love them and today we had them for dinner with roasted potato wedges and eggs \ud83d\ude42<\/p>\n\n\n

              Baked Beans Refined Sugar Free, Salt Free<\/h2>\n\t\t

              • 2 Tins Unsalted Butter Beans<\/li>
              • 1 Large Onion<\/li>
              • 2 Cloves Garlic<\/li>
              • 2 Tablespoons Unsalted Tomato Pur\u00e9e<\/li>
              • 1 Tin Tomatoes<\/li>
              • 200 ml Water<\/li>
              • 4 Medjool Dates (or 2 tablespoons maple syrup)<\/li>
              • 1 Teaspoon Smoked Paprika<\/li>
              • 2 Teaspoons Apple Cider Vinegar or red wine vinegar<\/li>
              • 1 Teaspoon Tamarind Paste or 2tsp lime or lemon juice<\/li><\/ul>\t<\/div>\n\t
                \n\t\t
                1. Preheat oven to 160\u00baC.<\/li>
                2. Heat oil in your frying pan and then gently fry your onions over a medium heat until golden. This takes approximately 8 minutes. Stir them often and then add the garlic. Cook for a further 2-3 minutes until soft but not browned.<\/li>
                3. Add the tomato pur\u00e9e, tin of tomatoes and 200ml of water to the pan and stir well.<\/li>
                4. Transfer your mixture to your blender, add the medjool dates and pur\u00e9e everything until it is completely smooth. (If you don\u2019t have a high speed blender you might want to soak your dates in warm water for about an hour before hand).<\/li>
                5. Pour the mixture into a deep oven dish and add all your remaining ingredients. Give it all a good stir to completely combine.<\/li>
                6. Bake in the oven for about 60 minutes, then remove from the oven stir in another 200ml of water and then bake for another 60 minutes. (2 hours in total).<\/li>
                7. Remove from the oven and leave to cool before serving. If the sauce is a little thick you can add more water at any time.<\/li>
                8. Serve with home made brown bread soldiers.<\/li><\/ol>\t<\/div>\n\t

                  When freezing I put them into a mini muffin tin to portion them out, then wrap the tin in cling film and freeze. After a few hours when they are fully frozen I pop them out of the tin and put into little freezer bags. To defrost, leave out about 2 hours before serving. The portions are small and defrost really quickly. Reheat in a microwave covered to prevent drying out for 30 seconds.<\/p>\n\t<\/div>\n\t
