I try my best to shop for seasonal foods whenever possible. I do this for many reasons, firstly, it\u2019s cost-effective. Who doesn\u2019t want to save money? Secondly, by shopping for produce in season, I\u2019m helping my local businesses thrive. And lastly, I\u2019m helping the environment by reducing my carbon footprint, as carbon emissions wouldn\u2019t need to increase to ship out of season produce across the world to me.<\/p>\n

Why is Kale so good?<\/h2>\n

It\u2019s January and one food in season right now is kale. Oh so wonderful, kale!\u00a0There\u2019s a popular following of this dark leafy green and for good reason. These crispy leaves are\u00a0packed with vitamins and minerals. And did I mention\u00a0it\u2019s a renowned superfood!<\/p>\n

Benefits<\/h3>\n

Kale\u00a0is full of antioxidants, especially cancer-fighting quercetin and kaempferol. In addition, kale contains carotenoid antioxidants that help protect your eyes and reduce the risk of macular degeneration (the worsening of your eyesight). Kale\u00a0can also help reduce cholesterol by providing bile acids which aid in the digestion of fats in the body!<\/p>\n

Kale contains high percentages of vitamin C, vitamin K, vitamin A, and vitamin B6. But wait\u2026there\u2019s more! Kale also contains plenty of hidden minerals like calcium, magnesium, potassium, copper, and manganese.<\/p>\n

How to cook Kale?<\/h3>\n

There are also many ways to prepare and serve kale. Kale can be sauteed, oven baked, blended, or placed in salads or other dishes without any preparation. This kind of versatility is perfect for any fussy eaters! Kale can easily be hidden in delicious dishes to ensure your little one\u2019s are getting the nutrients they need.<\/p>\n
