Not only do you want to ensure that your baby is getting the proper nutrition, but you also want to make sure that the foods you are giving them are safe for them to eat. These Broccoli and Cauliflower Vegetable Nuggets are the perfect sizes for little hands, and they\u2019re also easy to chew. The steamed broccoli and cauliflower provide a great source of vitamins and minerals, while the oats and garlic powder add delicious flavour and texture.<\/p>\n

Ingredients needed to make this Vegetable Nuggets recipe<\/h2>\n

All of the ingredients used in this recipe are readily available in your local supermarket and are all really inexpensive too! <\/p>\n

  • Broccoli: <\/strong>is great for babies because it is packed with nutrients such as Vitamin A, Vitamin C, calcium, and iron, which are essential for healthy growth and development.<\/li>\n
  • Cauliflower: <\/strong>is great for babies because it is a good source of Vitamin C and folate, which support a healthy immune system and proper neural development.<\/li>\n
  • Oats: <\/strong>They are a good source of fibre, which helps with digestion and may lower cholesterol levels (so good for us grown-ups!). Oats also contain important vitamins and minerals such as Vitamin E, Magnesium, Zinc, Iron, and Manganese. Oats have also been shown to have antioxidant properties and may also help in regulating blood sugar level<\/li>\n
  • Garlic Powder: <\/strong>Garlic powder adds the delicious garlic’y flavour! <\/li>\n
  • Eggs:<\/strong> Eggs are a highly nutritious food that is packed with essential vitamins, minerals, and healthy fats. They are an excellent source of high-quality protein, which is important for muscle and tissue repair. Eggs also contain essential amino acids, vitamins like Vitamin D, Vitamin B12 and Vitamin A and minerals like choline, and selenium. The yolk of an egg contains most of the egg’s nutrients, including all of its fat-soluble vitamins and essential fatty acids.<\/li>\n
  • Mild Cheddar Cheese:<\/strong> This recipe only uses a little mild cheddar cheese. You can also swap for goat cheese for smaller babies who are starting baby led weaning as it is lower in salt. <\/li>\n<\/ul>\n

    How to make these Cauliflower and Vegetable Nuggets<\/h2>\n

    These vegetable nuggets are so easy to make! <\/p>\n

    Start by steaming the broccoli and cauliflower. This should take no more than about 10-15 minutes. It also doesn’t need to be super soft, just al dente. It will cook fully in the oven when you bake the nuggets.<\/p>\n

    For my video I chopped the steamed broccoli and cauliflower by hand BUT using a food processor takes less than 5 minutes instead! Plus you can then add in the remaining ingredients and voila! No mess, one bowl and you have your mixture done.<\/p>\n

    Use an ice cream scoop to divide the mixture onto a baking tray lined with parchment paper. I added a light drizzle of olive oil to make the outside of the nuggets a little crispy. Then press down using the back of the ice cream scoop and shape it with a spoon or even your fingers. Bake for 15-20 minutes until golden. Then serve with a dollop of my Healthy Baby Led Weaning Ketchup<\/a>. SO good and great as an easy kids lunch recipe too!<\/p>\n
