These BLW Broccoli and Goat Cheese Muffins are my favourite recipe EVER to start baby led weaning. Packed full of amazing ingredients from broccoli (my favourite veggie) to the new Gouda Goat Cheese which is so delicious. It is also really low in salt which makes it the perfect cheese for smaller babies.

Top 5 reasons to love mini-muffins:

  1. They are the perfect little size for your baby to pick up and put in their mouth all on their own.

  2. They are really, really soft which makes them super safe.

  3. You can pack so much goodness into a little muffin from protein to iron-rich foods.

  4. One recipe can make 30 portions for your baby! This means you can stock up your freezer with amazing food for busy days, picnics, teatime or even a side to lunch.

  5. They are so easy to make, even with a little baby on your hip (I’ve been there so I know that one only too well).

How to Make These Mini Muffins for Baby Led Weaning

This recipe is so simple it’s likely to become your go-to baby led weaning lunch recipe. Like most baked recipes, in a large bowl, you’ll want to mix your dry ingredients and spices together first. For the wet ingredients, rather than dirtying another bowl, I like to create a well in the centre of my dry ingredients (like an inverted volcano). Then I add all of my wet ingredients to the centre and mix gently. Once my wet ingredients are combined well I mix the dry with the wet and boom! Simply fold in the cheese and broccoli bits and you’ve got mini muffin batter!

Key Ingredients for Broccoli & Cheese Mini Muffins for Baby Led Weaning:

Broccoli: You’ll want to pre-cook and cool the broccoli and chop it into tiny bits that mix in easily.

Gouda Goat Cheese: This is a new ingredient I found @dunnesstores and it adds an amazing flavour to these baby led weaning muffins and it’s lower in salt than many other cheese options.

Garlic Granules (or powder): It’s all about the flavour with this spice. It is important to continually introduce different spices to our babies and toddlers, this helps prevent picky eating later.
