Happy World Peanut Butter Day!

These are not words I ever thought I would hear myself say, but yet here I am embracing ‘World Peanut Butter Day’ with both hands… and these hands are filled with the most amazingly delicious bowls of peanut butter, chocolatey goodness that is also a healthy blw recipe too.

This recipe was inspired by a comment I received on a post during the week about another chocolate and sweet potato dish and it led me to the kitchen to prove (to only myself) that my recipe for Sweet Potato and Chocolate Orange Truffles was not just a fluke and that in fact, sweet potato was really put on this beautiful earth to be mixed with chocolate and in this case peanut butter. I also wanted to make something that would wow you all for this yummy world day. Bring on more crazy food days I say!

I had full intention of trying to make peanut butter brownies but the mixture raw was actually too good as it was and so, I decided to ditch the eggs, make it vegan and throw it into the fridge to set. Voila 2 hours later (even though I couldn’t wait that long) it was perfectly mousse-like, chocolatey and so delicious that I ended up eating 2 bowls eeek!!!! But I don’t CARE! This delicious, creamy dessert is wait for it… good for you! It also will melt in your mouth and the smooth consistency of peanut butter and chocolate is simply heaven for the senses.

I gave up eating refined sugar 2 years ago and because of my search for healthy treats and eats for both me and my entire family Baby Led Feeding was born. This dessert is the result of what happens when you add a little of this, and a lot of that into a blender and always in your head think ‘how can I get my kids to eat more veggies?’. Yes sometimes you just have to add chocolate.

For the grown up portions I added some chopped nuts but if I left these out of the babies portion. If you want to add them in just make sure they are crushed down finely. For smaller babies, just freeze the mousse into little pops and they make a perfect gum cooling remedy for teething little ones.
