"Super

I am always trying to make sure that my children are eating healthier but as a parent it is really frustrating to then walk into a supermarket and find nothing but colourful treats, with artificial flavourings, packed to the brim with sugar all marketed towards my 3 year old toddler. I am that parent you have seen with the child on the floor crying in a tantrum and I’m sure those without kids are looking thinking ‘would that woman not get a handle on her child!’. But, I don’t give in, not ever because I know the day I do Oscar will know he can get his own way.

Let me tell you it takes patience and a lot of deep breaths but so far i’m winning (at least in my head I am).

The last time I went shopping with my very independent toddler it was a scorching day. He was hot and bothered and as we got to the freezer section to purchase peas, he piped up ‘Oscar get ice cream’? The only way I could get out of there was to tell him we’d go home and make it, he loves cooking anyway so it’s like a double whammy to him. We went searching for ice cream cones but the only ones I could find were filled with zero nutritious ingredients and packed with sugar.

I had made bread cups for another recipe and it seemed like a great idea for cones, so home we went. The very first time I made these I shot the video at the same time and it worked! Seriously the cutest little cones you’ve ever seen and they taste so so good!

I used a really good quality bread came from our local baker that contains no sugar and lots of seeds so is super nutritious and filled with a really simple banana and pineapple nice cream with a dash of coconut milk to help it mix better. Really though when you think about it, this really is just brown bread and banana just done in a different way.

The simple things really do work best because within one week of posting this recipe on Facebook I had over 400k views. It might have had something to do with my super cute little helper who barely waited for the ice cream to freeze.

From start to finish it took me 20 minutes to make these ice cream cones. Really healthy and so easy! Just the perfect healthy treat for kids this summer and great for baby led weaning babies too!

Check out our video to show you how you can make your ice cream cones and let me know how you get on.

Happy summer,
