For this recipe I used a mix of Irish beetroot, Irish Spuds (of course) all mixed with Irish flour and seasoned with fresh Thyme. The beetroot is a great source of iron and is such a great addition to your children’s diets (if they don’t already eat it). It also has the highest amount of sugar of any vegetable (including sweet potato) so these little gnocchi are sweet and yummy. Maybe that is why my kids loved them so much \ud83d\ude42<\/p>\n

It is a messy dish to make as you will see from the video, but get stuck in there! Let the kids help and don’t worry hands under the tap will totally wash it all away. Oscar and I had so much fun making these and I hope you love this recipe as much as we did. It is:<\/p>\n
