This simple veggie loaded smoothie is a delicious combo of veggies with just a little fruit to make things sweet. Refreshing and delicious, it is great for breakfast, snack time, or even dessert!

It is no secret that I am a huge fan of smoothies for kids, just not the store bought ones which are high in sugar and mostly made using fruit. My ‘Smoothie Motto’ is that they should be wholesome and balanced, packed full of veggies and only sweetened with a little amount of fruit to make them as healthy as possible. This smoothie is so easy to make and is perfect for any time of the day – for breakfast, as a healthy snack or even for dessert.

It requires only 5 nutritious ingredients, 1 blender and takes less than 5 minutes to whip together. So super easy that you can teach your older children to make their own. Just always remember the balance of 80% veggies and base to 20% fruit and you just can’t go wrong.

The past few weeks have been C.R.A.Z.Y busy with the release of my new book ‘The Baby Friendly Family Cookbook’, my Baby Led Feeding event with Dunnes Stores and recipe planning for 2019. I could actually feel myself needing a boost of extra goodness so I’ve been overdosing on smoothies to get as many green veggies into my diet as possible.

"Kale

Dark Leafy Greens

Kale is one of favourite go-to vegetables for getting a boost of goodness into both myself and my little ones. It is literally packed with vitamin C, iron, vitamin A and the kids don’t even notice that its in there which is a total Mom win! Kale is part of the Dunnes Stores Everyday Savers range and a huge bag is only €1! Needless to say, I bought 6 bags, washed and froze it so I always have it on hand for those busy mornings.

Protein Powder

Both my 12 year old son Dylan and my husband are vegetarian so I sometimes add a scoop of protein powder to a smoothie, especially on days when we might not have eaten enough beans or lentils.

Teething Babies

Ice Lollies are a brilliant food for teething babies. Most babies don’t really want to eat when their little gums are sore and swollen (who would to be fair?), so teething Ice lollies are brilliant for both cooling down their gums while also getting as much goodness into them as possible.
