Ok hands up who has a problem with fussy children eating their veggies? YOU ARE NOT ALONE! Did you know that in Ireland, the UK and the US, only 1 in 4 children eat the right amounts of vegetables every day! Just to put that into perspective in Ireland there are 880,000 children under the age of 12 which means 660,000 children don’t eat the right amount of vegetables every day. See, I told you that you are not alone! The upside is, vegetable recipe are super easy once you get used to making them.<\/p>\n
The recommendation is that we are all supposed to be eating at least 5 portions of vegetables and fruit every day, and this is actually now thought to be closer to 7! So many children are struggling to even get 1 portion for veggies every day let alone 7 and this is a reality for so many parents. However,\u00a0it is totally fixable, I promise!<\/p>\n

Note:<\/strong> if your child is losing weight, or doesn’t care if they don’t eat anything for days on end and you feel the problem is getting worse, it is time to seek the help of a dietitian.\u00a0<\/p>\n Finally, to the recipe! I am a huge fan of cottage pie and when it’s loaded up with veggies, I feel super good about feeding it to my kids. This vegetable recipe is such a comfort food and is definitely one for a double dinner. The recipe makes a large portion that is enough for a freezer dinner too.<\/p>\n \u00a0<\/p>\n<\/h2>\n
