Sweetcorn is one of those vegetables which gets a bad rep, but it doesn\u2019t deserve it. Corn is a fantastic vegetable, rich in colour and nutrients, wonderful food and usually very popular with picky eaters. Sweetcorn Fritters with Mango Salsa is a yummy, healthy and fun finger food<\/a> recipe that your kids will love to find in their school lunch.<\/p>\n <\/p>\n As a vegetable, sweetcorn<\/a> is one of your five-a-day, and it has plenty of nutritional value.\u00a0Picky eaters usually love sweetcorn as it tastes sweet, and while you might think that means it\u2019s full of sugar, an ear of corn actually has about the same number of calories as an apple and less than a quarter the sugar. Another reason why this makes a super school lunch.<\/p>\n <\/p>\n These little veggie fritters are made from simple everyday ingredients you probably already have on hand.\u00a0<\/p>\n That’s pretty easy, right?<\/p>\n <\/p>\n You also don’t need too many dishes for this recipe. Just mix your flour, eggs, and milk with a whisk. Then fold in the sweetcorn and spring onions. You can totally do that, right?\u00a0<\/p>\n Okay, next you just cook them until golden brown on each side. \ud83d\ude42\u00a0<\/p>\n <\/p>\n Now I know you’re thinking, that mango salsa is going to be a pain… But it’s not! It’s as simple as dicing up a mango, a little sweet onion (just 1\/4 of an onion), and coriander. Then squeeze a lime over it and stir!\u00a0Now in your back to school lunch box you have veggies, protein, and a side of fruit.
