This is probably one of the best accidental bread recipes I have ever made! EVER! Well with the exception of my pizza muffins. I have run out of plain flour and milk, and baking powder, however, I had 2 tubs of natural yogurt to use up. So Oscar and I, as an experiment, put a cup of self-raising flour and 1 cup of yogurt together in the hope that we could make something out of very little.

I really did not expect these to ever turn out a super they did, but these 2 simple ingredients make the lightest, fluffiest, white bread rolls you will ever taste! Perfect, as I’m actually never buying bread rolls again. EVER! The best part is that it takes less than 5 minutes to make it too!

So not only do these 2 ingredient bread rolls contain, well 2 ingredients, they are also a super easy bread roll recipe too! Total win-win for the Irish Mum, locked in her house, going a little crazy!

All you need is equal parts of both flour and yogurt. So you can make tonnes of these things for your freezer. I used one cup of flour to one cup of yogurt, but you can use a regular bowl of flour to a regular bowl of yogurt. ZERO weight measurements required here.

But, I don’t have Self Raising Flour!!!

Do not despair! For every 1 cup (130g) of plain flour, use 2 teaspoons of baking powder. It will work the exact same! I haven’t tried other flours yet, but I’m on it this week!

Can I make these a Gluten-Free Roll Recipe?

Yes! Use gluten-free baking flour and add the yogurt as normal. I asked a few Mommas who have kids with intolerances and they said the results were perfect! Light and fluffy rolls that were super delicious.

Can I make these Vegan Rolls?

Yes, you absolutely can! All you need is a plant-based yogurt and the juice of 1 lemon. Now I know this changes them from 2 ingredient bread rolls to 3 ingredients, but if you or your little ones have an allergy to dairy, or you follow a vegan diet and simply don’t drink milk then it is worth it!

The difference between the regular cow’s milk yogurt and dairy-free yogurt is the acid. It is the acid in the yogurt that creates those lovely, light bubbles and makes this bread light and fluffy. However, you can achieve the same result with lemon, because, yes lemon is acidic. By adding the juice of 1/2 a lemon to a vegan yogurt or dairy-free yogurt you make it acidic.

I made these bread rolls using 1 cup of flour (130g) and 1 cup of yogurt (250ml). Take the same amount of flour, then add 1 cup (250ml) of dairy-free yogurt to a bowl, stir in the juice of 1/2 a lemon. Then mix the flour and yogurt together in the same way as the recipe below.

It works a dream and I have been tagged in hundreds of images on both Instagram and Facebook showing the results! Whoop!!!!

Egg wash

Totally optional (that’s why I have kept this as 2 ingredients). The egg wash just helps the bread rolls to go a lovely brown color on the top. If your little one has an egg allergy just leave it out, also leave out if you don’t have any egg 🙂

So there you go!
