Method

  • Preheat oven to 180ºC.
  • Finely chop the broccoli and cauliflower until it resembles rice. You can do this with a knife or quickly using a food processor.
  • Add to a large mixing bowl along with the oat flour, garlic powder, eggs and cheese, then stir well until fully combined.
  • Use a small ice cream scoop or tablespoon measure to divide the mixture onto a lightly oiled tray lined with parchment paper.
  • Bake for 15-20 minutes until the nuggets are golden around the edges and set fully.
  • Serve warm or cold.
