Vegetable savory muffins for baby-led weaning and toddlers. Mini muffins are the perfect finger food for babies and lunchboxes too!

Method

  • Pre-heat oven to 180ºC.
  • Add flour, baking powder, garlic, peas, carrot, cheese, chives and spring onions to a bowl and stir well.
  • In a separate bowl add the egg, milk and olive oil and whisk until smooth, then pour into the flour and vegetable mixture and stir until fully combined.
  • Separate the mixture into muffin cases, then bake for 20-25 minutes until golden brown and cooked through. A skewer should come out clean.
  • Store in an airtight container for 3-5 days or freeze.
