A super mix of sweet pea and spinach in a tasty falafel served with the yummiest, easy family recipe that are perfect for school lunch boxes.
Ingredients
Veggie Sweet Pea Falafels
1 tablespoon rapeseed oil
1 medium onion
2 cloves garlic
1 x 400g tin chickpeas
Small bunch parsley
1 teaspoon cumin powder
1 egg
3 tablespoons plain flour
1 cup frozen peas
1 cup packed with spinach
Hummus
1 x 400g tin chickpeas
1/4 clove garlic
Juice 1 lemon
4 tablespoons extra virgin olive oil
4 tablespoons light tahini
Ground pepper
Pepper to season
Method
Pre-heat oven to 180ºC.
Heat the rapeseed oil in a frying pan and gently fry the onion until it becomes translucent then add the garlic and cook for a further minute.
Empty into a food processor along with all of the other falafel ingredients and process until the chickpeas have broken up and the mixture is smooth.
Scoop onto a baking tray lined with parchment paper (I use an ice cream scoop).
Bake in the oven for 25 minutes until the falafels are set and cooked through. Remove from the oven and cool fully.
Meanwhile make the hummus by adding all of the ingredients to a food processor or blender and blend until has a smooth and silky consistency.
Serve the falafels with a side of hummus for dipping.
