Super Dooper Sweet Pea Falafels and Hummus

A super mix of sweet pea and spinach in a tasty falafel served with the yummiest, easy family recipe that are perfect for school lunch boxes.

Method

  • Pre-heat oven to 180ºC.
  • Heat the rapeseed oil in a frying pan and gently fry the onion until it becomes translucent then add the garlic and cook for a further minute.
  • Empty into a food processor along with all of the other falafel ingredients and process until the chickpeas have broken up and the mixture is smooth.
  • Scoop onto a baking tray lined with parchment paper (I use an ice cream scoop).
  • Bake in the oven for 25 minutes until the falafels are set and cooked through. Remove from the oven and cool fully.
  • Meanwhile make the hummus by adding all of the ingredients to a food processor or blender and blend until has a smooth and silky consistency.
  • Serve the falafels with a side of hummus for dipping.
