These recipe are easy to make, healthy, super nutritious and are all designed to get your kids eatingmore vegetables and fruit in a yummy and fun way.
Pre-heat oven to 180ºC (350ºF).
Add the paprika, onion powder, polenta, juice of the lime, garlic and rapeseed oil to a baking tray. Use a spatula to mix really well until it has turned into a paste, then set aside.
Peel and slice the vegetables into fries shapes, then toss into the paste using your fingers to make sure that all of the vegetables are totally covered.
Roast in the oven for 30 minutes or until the vegetables are soft on the inside but crispy and golden outside.
Serve with a dollop of sour cream and sprinkle over some finely chopped parsley.
