Low Carb Veggie Fries – How to Get Kids to Eat Vegetables

These recipe are easy to make, healthy, super nutritious and are all designed to get your kids eatingmore vegetables and fruit in a yummy and fun way.

Method

  • Pre-heat oven to 180ºC (350ºF).
  • Add the paprika, onion powder, polenta, juice of the lime, garlic and rapeseed oil to a baking tray. Use a spatula to mix really well until it has turned into a paste, then set aside.
  • Peel and slice the vegetables into fries shapes, then toss into the paste using your fingers to make sure that all of the vegetables are totally covered.
  • Roast in the oven for 30 minutes or until the vegetables are soft on the inside but crispy and golden outside.
  • Serve with a dollop of sour cream and sprinkle over some finely chopped parsley.
