Pre-heat oven to 180ºC
Pour the sunflower seeds onto a baking tray then place in the oven for about 8 minutes. Be careful as the seeds can burn really quickly. They should just be heated through but not browned.
Pour into a food processor and turn it onto high. It takes a good while for the oils to start releasing from the seeds so it is worth noting that you should give your food processor a little break every 10 minutes or so to allow it to cool down.
Scrape down the inside of the bowl while the machine is resting then start is again and repeat until you have a super smooth consistency to your sunflower butter.
Store in an airtight jar in the fridge and use within 1 month.
