Add all of the brownie ingredients to a food processor and blend until smooth and fully combined.
Turn into a tin lined with parchment paper and tap the tin 2-3 times to remove the bubbles.
Bake for 25 minutes until a skewer comes out clean. Then remove from the oven and leave to cool fully.
Meanwhile, make the frosting by adding all of the frosting ingredients to a cleaned food processor and blend until it turns into a silky, creamy texture.
Spread over the top of your cooled brownie and sprinkle over the finely ground pistachios.

Yes you can freeze these brownies! Just cut into the little squares and freeze. Remove when needed and leave at room temperature for about 30 minutes to defrost. Scrummy and great to have as a quick snack for busy days.
