Soak oats with the raisins overnight – To soak just cover with water or milk and leave in the fridge covered.
The next morning drain the oats using a sieve.Preheat oven to 180ºC/350ºFChop your apple into small baby sized pieces. It will turn lovely and soft when baked.In a large bowl mix all the ingredients together.Divide into an oiled mini muffin tray and bake for 20-25 mins or until golden brown, as shown in the photo.Serve with a tiny drizzle of maple syrup (at the weekends 😉

These little muffins are ideal for the freezer. Just make a big batch, freeze in freezer bags and defrost in a fridge overnight or if your in a hurry in a microwave in just a few minutes.
