Pre-heat oven to 180ºC.
Add the flour and butter to a large bowl and using your fingers, work it until it starts to resemble fine breadcrumbs.
Add water, one tablespoon at a time and mix until it forms into a dough.
Sprinkle a little extra flour on your work surface, then roll the dough until it is about 5mm deep, then use a small cookie cutter to cut out little circles.
Place onto a baking tray lined with parchment paper, then bake for 15 minutes until golden.
Spoon half a teaspoon of pesto onto each pastry, then top with a little goat cheese and place back into the oven for 5 minutes to allow the goat cheese to melt slightly.
Top with a little cranberry sauce and a sprinkle of rosemary then finally add a little sprinkle of desiccated coconut to serve.
