These little balls of pumpkin goodness are just that - full of goodness. Easy to make and the perfect healthy treat for kids of all ages.
Ingredients

cup
pumpkin purée
roast pumpkin and blitz

cups
oats
1
cup
desiccated coconut 90g or 1/3 cup smooth peanut butter
1
tbsp
maple syrup
¼
tsp
ground ginger
½
tsp
ground nutmeg
½
tsp
ground cinnamon

tbsp
coconut oil
1
bar good quality raw chocolate
Method
Add all of the ingredients with the exception of the chocolate to a food processor and process until it starts to come together.
Pour the mixture into a bowl and leave in the fridge for about 1 hour to allow it to thicken slightly.
Remove from the fridge, and roll into bite sized balls, then return to the fridge.
Heat the chocolate in a bowl over some warm water until it melts, then dip each of the balls into the chocolate and return to the fridge to set fully.
