Finely grate the beetroot, carrots and cucumber. You can use a spiraliser, or if you don’t have one, a food processor or even a vegetable peeler.
Finely chop the cabbage and red onion, then add all of the vegetables to a bowl.
Peel and chop the mango, then use 1/4 of the flesh and add to the vegetables.
Add the remaining mango to a blender along with the other salad dressing ingredients and blend until smooth and creamy.
Drizzle 3-4 tablespoons of the dressing over the salad and gently toss the vegetables until they are covered.
Finely chop the parsley, then sprinkle over along with about 2 teaspoons of sesame seeds and decorate with chopped lime.
Serve the salad with the extra dressing and sesame seeds on the table and allow your little ones to add a little bit more if they want.
