Cut crusts from the bread, then using a rolling pin, roll until flat.
Add the Marscapone cheese and passion fruit to a bowl and mix well. Add 2 teaspoons of the mixture to one side of the bread then roll up. Its important not to overpack the bread or the mixture will come out when cooking.
Crack the eggs in a bowl and whip, then dip each roll into the egg.
Heat a light drizzle of olive oil in a non stick pan, then fry the bread rolls until they are golden brown all over.
To serve, top with thinly sliced mango, cinnamon sugar (for older kids) and mango.
